Why Pizza Dough Matters (A Lot)

    Let’s be honest—even the best cheese and toppings can’t save a bad crust. If your dough turns out dry, dense, or flavorless, your grilled pizza will fall flat no matter what you put on top. That’s why starting with a tried-and-true homemade pizza dough recipe is key to pizza success.

    Whether you're making a classic Margherita or loading it up with grilled veggies and sausage, it all starts with the dough.

    My Dough-Making Journey (Over 25 Years Strong!)

    Making pizza dough (and bread in general) is one of my kitchen obsessions. There’s just something magical about taking a few humble ingredients—flour, yeast, water, and a bit of salt—and turning them into something so delicious and versatile.

    I’ve been baking homemade breads and pizza dough for nearly 30 years. (Yep, I’ve definitely given away my age with that one!) Along the way, I’ve picked up a lot of tips, tricks, and lessons that I’m excited to share with you.

    So let’s roll up our sleeves and make the kind of pizza dough that has your family asking for grilled pizza night every week.

    You Don’t Need a Stand Mixer (But It Helps)

    This homemade pizza dough recipe is one I’ve developed over the years by blending a few tried-and-true techniques and tweaking along the way. You’ll find instructions below for making it with or without a stand mixer—because not everyone has one (or needs one!).

    Yes, a stand mixer—like my trusty KitchenAid Artisan—makes kneading a bit easier, especially when you're juggling a busy evening. But honestly? Sometimes I just want to roll up my sleeves and get in there with my hands. There’s something so satisfying about kneading dough yourself and feeling it transform as you work it.

    So don’t worry if you don’t have a mixer. You can absolutely make this dough by hand, and it will turn out just as delicious. Whether you're a seasoned baker or just getting started, this recipe is flexible and forgiving.

    Easy Homemade Pizza Dough for Grilled Pizza

    This easy homemade pizza dough recipe is perfect for grilled or oven-baked pizza. Make it by hand or with a stand mixer—no fancy tools required! Soft, chewy, and full of flavor, it’s the ideal base for your favorite pizza toppings.

    Ingredients  

    • 2 cups warm water
    • 1 packet active dry yeast
    • 3 cups bread flour
    • 2 cups unbleached all purpose flour
    • 1 tbs sugar
    • 1 tsp salt
    • 2 tbs olive oil

    Instructions 

    • In a small bowl warm the water in the microwave until it is just slightly warmer then body tempurture. Stick a pinky in, if it is hot to the touch it is too hot. Let cool to a little warmer then body temperture.
    • If your using a stand mixer: Pour the warmed water into the bowl of the mixer. Attach the dough hook.
    • No Stand Mixer: Add the yeast to the warm water in a small bowl.
    • Both methods: Set aside and allow the yeast to get bubbly about 10 minutes.
    • Both methods: Put all the dry ingredients into a seperate large bowl. Whisk them together.
    • If you're using a stand mixer add the olive oil to the yeast water.
    • Turn the mixer on low. Slowly add the dry ingredients to the bowl of the mixer a cup at a time. Mix on low for 2 minutes. Turn mixer up to medium high and knead for 10 minutes. If the dough seems too sticky. Add a tablespoon of flour at a time to the mixer bowl until the dough is no longer sticky.
    • No Stand Mixer: Pour the yeast and water into the large bowl of whisked ingredients. Add olive oil. Stir with a wooden spoon until the dough is too hard to stir any longer and starts to form a ball.. Turn the dough out onto a floured surface and knead by hand until the dough is smooth and elastic, about 10 minutes. Add more flour as needed while kneading if the dough is sticky.
    • Both methods: Once you're done kneading the dough grease a large bowl with olive oil and add the dough to the bowl, turning it to coat with oil. Losely cover with a dish towel or plastic wrap and allow to rise until doubled. About one hour.
    • After the dough doubles punch it down. Evenly divide into six pieces. Form each piece into a ball. Set aside, cover with plastic wrap until ready to use.
