This weeks Sunday Supper is all about soup.

Soup is the perfect meal for the cold winter days. 

Here where I live in Florida it was 81 during the day this past week . Sorry….. really I am not rubbing it in!

Last weekend it went down in the 40’s and boy did I wish I had a big piping hot bowl of soup to eat. This recipe is one that I have been thinking about creating for a long time. So when I saw the theme of this weeks #SundaySupper I jumped in.

 I love making soup. Most of the time I don’t even follow a recipe. I use whatever I have on hand. Most of the soups I enjoy making start out with chicken but I also love making a vegetable and pasta soup. 

When I am being lazy I throw all my ingredients into the crock pot. Other times I just make it on the stove in a big pot.

 

I make homemade soup all year long. It is a dish I love any time of the year.  If you would like to read how I make a pot of chicken soup stock you can click on the link for Homemade Chicken Noodle Soup .    I like to use a really easy technique that uses whatever ingredients I have on hand in my kitchen.

Chicken Tortellini and White Bean Soup #SundaySupper

Ingredients
  • 6 cups water
  • 1 lb Boneless Chicken Breast
  • 1 small whole white onion, peeled
  • 1 carrot, peeled and diced
  • 1 tsp black peppercorns
  • 1 tsp sea salt
  • 2 large Bay leaves
  • 1 tsp garlic, finely chopped
  • 4 cups chicken stock
  • 1 8 ounce package Barilla 3 Cheese Tortellini
  • 1 15 ounce can Cannellini Beans, drained and rinsed
  • handful of very baby spinach leaves (optional)
  • Handful of fresh parsley (optional)
Instructions
  1. Add first 8 ingredients to a stock pot.
  2. Bring to a boil. Boil 10 minutes. Reduce heat and simmer. Simmer until chicken is cooked completely.
  3. Remove chicken,onion and bay leaves from the pot. Discard onion. Allow chicken to cool.
  4. Strain liquid from the stock pot through a fine mesh strainer, reserving the pieces of carrot and liquid. Discard solids from strainer.
  5. Wash the pot and return the reserved liquid, bay leaves, carrots and 4 cups of chicken stock to the pot.
  6. Return heat to high and bring to a boil.
  7. While the water is heating pull apart the chicken meat into bite size pieces.
  8. Add the dry tortellini to the pot of boiling water and stir to keep the tortellini from sticking. After about 5 minutes add the can of rinsed cannellini beans and chicken meat to the pot and stir.
  9. Continue boiling until the tortellini is tender and cooked through about 12 to 15 minutes.
  10. Serve with bread or crackers.
  11. If you have some baby spinach leaves or parsley on hand you can rinse and roll the spinach leaves and slice them thinly and add to the hot soup. For parsley rinse and chop finely.
Notes
Fresh spinach or parsley is not necessary for the flavor of the soup but makes a nice contrasting color to the other ingredients.

    I’ve had tortellini in pasta salads but never thought of it in soups. I really don’t know why. Thanks for the inspiration and it is a lovely soup. Love the white beans.
