Homemade Almond Butter

Homemade Almond Butter is so easy to make and can really save you some money.

Those little containers of almond butter found at the store can be pricey. You can make delicious nut butter at home with nothing more than a bag of roasted almonds and a good food-processor.

Then you can grind fresh almond butter any time you want. There is a trick to it though.

Homemade Almond Butter Ingredients

  • 3 cups almonds
  • a good food processor 
  • a large cookie sheet
  • parchment paper (optional)

Directions

Step 1: Spread the almonds over a large cookie sheet in a single layer. Bake for 10 minutes in a preheated 375 degree oven, tossing after 5 minutes.

Step 2: Immediately and carefully pour the hot almonds into the food processor.

Step 3: Pulse a few times to break up the almonds.

Step 4: Turn the food processor on 1 or low and grind the nuts for 3 minutes.

Step 5: Scrape down the sides of the processor and process for another 2 minutes on low.

Step 6: Turn the processor up to high and process until the preferred level of smoothness is reached.

After just a few minutes you will see the ground up nuts start to come together and form a paste.

Recipe FAQS

How long does homemade almond butter last?

Homemade almond butter will last 2 to 3 weeks when it is refrigerated.

Should I refrigerate almond butter?

Homemade almond butter does not have to be refrigerated but because it has no preservatives and warm or hot temperatures can cause any nut butter to go rancid it is recommended to refrigerate homemade almond butter to help it last longer and prevent it from going rancid quickly.

Why is my almond butter so dry?

Homemade almond butter may turn out dry if you used old almonds to make it. Old nuts that have not be stored properly in an airtight container can dry out. If you use them to make almond butter there may not be enough of the natural almond oil left in the nuts.

Expert Recipe Tips

  • I used a 16 oz. bag of Blue Diamond Whole Natural Almonds.
  • Grinding the nuts: If needed to help speed the process add 1 teaspoon of a light oil to the blender when adding the warm nuts.
  • I wanted smooth almond butter so I processed the nuts for a total of 20 minutes from start to finish.
  • The secret to making homemade almond butter or any homemade nut butter is heat and a strong food processor.
  • Roasting the nuts in the oven for a short period of time allows the natural oils to be released and is what helps your food processor turn the dry nuts into a healthy homemade nut butter.
  • Lining the cookie sheet with parchment paper helps with clean up.
  • Store the homemade almond butter in a glass jar or plastic container with an air tight lid in the refrigerator.

How to make extra creamy Almond Butter

At the stage in the photo below the almond butter is almost done.

15 minutes has elapsed since I first started grinding the almonds into the food processor.

Continue to process the almonds until you come to the creamy consistency that you like.

For a smoother nut butter keep grinding the almonds for another couple of minutes. 

I don't think it is possible to get a completely smooth almond butter (like smooth peanut butter) at home but this is good enough for me.

I've been enjoying my home almond butter on a warm tortilla with a sprinkle of cinnamon and a drizzle of honey. It make a perfectly healthy afternoon snack. 

Storing homemade almond butter

Store the homemade almond butter in a glass jar or plastic container with an air tight lid in the refrigerator.

Since there are no preservatives in homemade nut butters it is a good idea to keep it in the refrigerator.

    Will have to try this with cashews. My mom was raving about cashew butter, but can't find it anymore in the store she used to shop in. She will love this!

    I am going to try this soon. I know a person in my facebook fitness group who made some cashew nut butter a while back - I think she put a little olive oil in it. I like the idea of this being just the nuts and nothing added. Your tortilla snack sounds really good - maybe I can get my kids to try that.
