Skittles® Game Day Cupcakes

If you're a football fan then you know the big game is almost here. All around the country fans will be gathering to eat good food and cheer on their favorite team. Brighten up the day with these Skittles® Game Day Cupcakes.
If you are planning a big game day celebration then you need to head over to the nearest Dollar General Store and pick up some Skittles® candy so you can make these Skittles® Game Day Cupcakes.
If your favorite teams color happen to be the same as some of the bright rainbow colors of Skittles® candy then you could make this game day cupcake display to match your team colors.
Or you could do as I have and make a fun rainbow-hued football shaped cupcake display.
These bright and fun Skittles® Game Day Cupcakes will put a smile on everyone's face on game day.

How to Make Skittles® Game Day Cupcakes
Ingredients
- 41 oz bag Skittles® Candy
- 1 envelope purple cake mix plus ingredients to make
- 1 envelope orange cake mix plus ingredients to make
- 1 envelope red cake mix plus ingredients to make
- 1 envelope green cake mix plus ingredients to make
- 1 envelope yellow cake mix plus ingredients to make
- white cupcake papers
Directions
- Prepare each color of cake mix as directed on the package.
- Line a cupcake pan with the white cupcake liners.
- Fill each cupcake liner ¾ full.
- Bake as directed on the package.
- Allow to cool completely.
- While the cupcakes are cooling prepare the buttercream frosting.
Buttercream Frosting
Ingredients
- 1 cup of softened butter
- 5-6 cups powdered sugar
- ⅓ teaspoon pure almond extract
- 3 tablespoons heavy whipping cream
Directions
- Beat the butter in a large bowl with a hand mixer or in the bowl of a stand mixer until lump-free, about 3 minutes.
- Slowly add the powdered sugar one cup at a time, beating in between each cup.
- After the first cup of powdered sugar add the almond extract to the bowl then continue adding powdered sugar.
- After the fifth cup of powdered sugar check the consistency of the buttercream frosting. If it has thickened to the consistency of peanut butter then you can skip the last cup of powdered sugar.
- Once all the powdered sugar has been mixed into the butter add the heavy whipping cream to the bowl.
- Beat on high for 3-5 minutes or until the frosting is thick and fluffy.
How to decorate the Skittles® Game Day Cupcakes
- Using a butter knife or a small spatula spread about 2 tablespoons of frosting onto each cooled cupcake.
- As each cupcake is frosted add a row of five corresponding colored Skittles® candies down the center of each cupcake.
- Use red Skittles® for the red cupcakes and so on.
- On the dessert table arrange 36 cupcakes into the shape of a large football.
- Arrange the remaining cupcakes around the football cupcakes on the table.
- Fill a candy dish with the remaining Skittles® candy.
