No Bake Chocolate Haystack Cookies

Quick and easy No bake Chocolate Haystack Cookies are one of the easiest cookies to make. They are a perfect cookie recipe to make any time of the year. If you are craving a treat that is crunchy, salty and sweet Haystack Cookies are for you! Only four ingredients needed to make these cookies!

Haystack cookies are great any time of the year. And they make a great Christmas cookie recipe for a holiday Christmas cookie exchange, birthday party or a quick homemade treat Haystakes are it.

They are fast and easy to make just like the traditional Butterscotch Haystack Cookies.

If you love making classic cookie recipes like Chocolate Chip Cookies, Peanut Butter Cookies but find you are short on time or don't want to use the oven no bake cookies like these are what you are looking for.

What are Haystacks?

This no bake cookie recipe is made in one bowl and you only need 3 ingredients to make them. They get their name because they look like little haystacks after you make them.

Premeasured ingredients to make chocolate haystacks.

List the recipe ingredients without amounts and include info about them

  • Melting Chocolate: Semi sweet chocolate chips, chocolate bark or Ghirardelli melting chocolate wafers. You have a couple of options when it comes to the chocolate you use. I love the ease of melting and flavor of Ghirardelli chocolate wafers for chocolate treats. Chocolate chips and chocolate bark can be used. Keep in mind each of these candy coatings will have a different chocolate flavor.
  • Peanut butter: smooth peanut butter is traditionally used to make haystack cookies, but if you want to add even more crunch you can use crunchy peanut butter.
  • Chow Mein noodles: You'll find these slightly salty crunchy noodles with the Asian foods at most retail stores.

Equipment

You will need a few basic baking tools to make these cookies:

  • a medium glass bowl: one glass bowl will be needed to melt the chocolate, and mix the ingredients.
  • 1 ½ inch cookie dough scoop or a tablespoon: helps shape the ingredients into same size cookies.
  • parchment or wax paper: stops the cookies from sticking to the pan.
  • a cookie sheet or a couple of small baking sheets: I like to use smaller 9.5 X 13 inch baking pan because they are easier to handle.

Recipe Prep

  • Premeasure all of the ingredients before you start melting the chocolate.
  • Line the cookie or baking sheets with parchment or wax paper. Set aside until needed.

Step by Step Directions

Step 1: Slowly melt the chocolate in a microwave safe bowl in short increments. Start with 20 second increments and work your way down to 10 or even 5 seconds until there are only small bits of chocolate chips left in the bowl. Stir each time the microwave stops.

Step 2: Once melted fold the peanut butter into the melted chocolate until the peanut butter is mixed in completely and you do not see streaks of peanut butter.

Step 3: Once the chocolate and peanut butter are combined add half the Chow Mein noodles and fold until coated. Add the remaining noodles to the bowl and fold them in. As you stir slightly crush the Chinese noodles.

Step 4: Using a 1 ½ cookie dough scoop or a tablespoon drop mounds of the chocolate, peanut butter and Chow Mein noodles onto the lined baking sheet. Space them apart evenly so they are not touching.

Step 5: If decorating with chocolate sprinkles add them now. I added sprinkles to half of the haystacks I made.

Step 6: Place the trays with the cookies in a safe place on a table or counter top to harden. This can take a few hours depending on the temperature of your home.

💡Hardening Melted Chocolate Tip

If you're going to make this recipe, make sure to follow this top hardening chocolate tip!

You can also harden the chocolate by placing the trays in the refrigerator. I don't like to do this because the shock of the warm chocolate moving into the cold refrigerator can cause moisture droplets to form on the surface of the chocolate ruining the presentation.

📌Optional Toppings

  • Chocolate or holiday sprinkle can be added.
  • Mini marshmallows can be cut into smaller pieces and added to the top of the cookies before the chocolate has hardened.

  • 3 cups Chow Mein Noodles
