  • 2 cups Semi Sweet Chocolate chips
  • ½ cup creamy Peanut butter
  • 3 cups Chow Mein Noodles
  • 2 tablespoons Chocolate sprinkles (optional)

  • Measure all of the ingredients before starting.
  • Line the pans with parchment or wax paper. Set aside until needed.

How to make Chocolate Haystack Cookies

  • Melt the chocolate in a microwave safe bowl in short bursts. Start with 20 seconds and work your way down to 5 seconds until there are only small pieces of chocolate chips left. Stir each time the microwave stops.
  • Once the chocolate is melted add the peanut butter to the bowl and stir until the peanut butter is mixed in completely.
  • Add half the Chow Mein noodles to the bowl and fold until they are coated. Add the remaining noodles to the bowl and fold them in. As you stir slightly crush the Chinese noodles.
  • Use a cookie dough scoop or a tablespoon to drop mounds of the chocolate, peanut butter and Chow Mein noodles onto the baking sheets. Space the cookies apart evenly so they are not touching. If decorating with chocolate sprinkles add them now. I added sprinkles to half of the haystacks I made.
  • Place the trays with the cookies in a safe place to harden. This can take a few hours depending on the temperature of your home.
  • Once the chocolate has hardened completely you can serve.
  • Store any leftover cookies in an airtight container to keep them fresh.

Recipe Expert Tips

  • Measure the ingredients out before starting so there is no delay when combining. The melted chocolate will start to harden quickly.
  • Mixing the Chow Mein noodles into the melted chocolate and peanut butter may be a little difficult. I like to add half at a time to make it easier to coat the hard noodles completely.
  • Using a dough scoop is less messy and helps you make cookies that are the same size.
