Recipe FAQs

Can I use rotisserie chicken instead of cooking chicken from scratch?

Rotisserie chicken is perfect for this casserole recipe. Save yourself time by using one. Any cooked chicken you’ve got on hand can be used. Leftover baked chicken or grilled chicken are two other options.

Can I make this casserole ahead of time?

You can prep this casserole up to 2 days in advance and store it covered in the fridge before baking. I wouldn't make it up much more in advance because the filling ingredients might separate and get runny. If making it ahead of time do not put the cracker topping on until right before baking or the crackers will get soggy.

What can I use instead of Ritz crackers for the topping?

If you don’t have Ritz crackers, try panko bread crumbs, if you have another type of cracker use it and add a little garlic salt to add some flavor, or you can even use crushed potato chips.
