Recipe Prep
- Preheat the oven.
- Pull the meat from the rotisserie chicken and cube. Set aside until needed.
Chicken Casserole Ingredients
- cubed cooked chicken (rotisserie chicken or leftover)
- the filling ingredients: cream cheese, cheddar cheese, cottage cheese, sour cream, cream of chicken soup
- spices: garlic powder, onion powder, black pepper, salt to taste
- cracker topping: Ritz crackers, butter, parsley
Step by Step Directions

- Step 1: In a large bowl mix the cooked chicken, shredded cheese, softened cream cheese, cottage cheese, sour cream, cream of chicken soup, garlic powder, onion powder and black pepper. The mixture will be very thick.
- Step 2: Spread the filling into an 8x8 or 9x9 inch casserole dish and spread into the edges.
- Step 3: Crush the crackers in a plastic bag and pour into a bowl. Toss the parsley and melted butter with the crushed crackers. Toss until the cracker pieces are evenly coated with butter.
- Step 4: Spoon the crackers over the top of the casserole.
- Step 5: Place the casserole in the preheated oven and bake uncovered for 30 to 40 minutes or until the cracker topping is golden brown and the casserole is bubbling hot in the center.
Serving Suggestions

You can prep this casserole up to 2 days in advance and store it covered in the fridge before baking. I wouldn't make it up much more in advance because the filling ingredients might separate and get runny. If making it ahead of time do not put the cracker topping on until right before baking or the crackers will get soggy.
If you don’t have Ritz crackers, try panko bread crumbs, if you have another type of cracker use it and add a little garlic salt to add some flavor, or you can even use crushed potato chips.

Million Dollar Chicken Casserole Recipe
Ingredients
- 3-4 cups cooked chicken (rotisserie chicken)
- 4 oz. cream cheese (completely softened to room temperature)
- 1 ½ cups shredded sharp cheddar cheese
- 1 cup cottage cheese
- ½ cup sour cream
- 10 oz. can cream of chicken soup
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon ground black pepper
- 1 Large Sleeve Ritz crackers (crushed)
- 4 tablespoons unsalted butter (melted)
- ¼ teaspoon dried parsley flakes
Instructions
Prep
- Preheat the oven to 350 °F. Degrees.
- If using a rotisserie chicken remove the chicken meat from the bones. Cube into bite size pieces. Discard the bones and skin.
Assembling the casserole
- In a large bowl mix the cubed chicken, cheese, softened cream cheese, cottage cheese, sour cream, cream of chicken soup, garlic powder, onion powder and black pepper. The mixture will be very thick.
- Spread the chicken casserole filling into an 8 x 8 or 9 x 9 inch casserole dish. Be sure to spread the filling into the edges and corners of the dish.
- Sprinkle the crushed cracker, butter and parsley topping over the top.
- Bake uncovered for 30 to 40 minutes or until the cracker topping is golden brown and the casserole is bubbling hot in the center.
- Allow to cool slightly before serving.
