This creamy, cheesy Million Dollar Chicken Casserole features tender chicken mixed with a rich cream cheese filling and a buttery cracker topping. It's an easy, satisfying dish that’s perfect for weeknights or anytime you’re craving comfort food.
If using a rotisserie chicken remove the chicken meat from the bones. Cube into bite size pieces. Discard the bones and skin.
Assembling the casserole
In a large bowl mix the cubed chicken, cheese, softened cream cheese, cottage cheese, sour cream, cream of chicken soup, garlic powder, onion powder and black pepper. The mixture will be very thick.
Spread the chicken casserole filling into an 8 x 8 or 9 x 9 inch casserole dish. Be sure to spread the filling into the edges and corners of the dish.
Sprinkle the crushed cracker, butter and parsley topping over the top.
Bake uncovered for 30 to 40 minutes or until the cracker topping is golden brown and the casserole is bubbling hot in the center.
