Why you'll love this recipe

I love this dinner recipe and so will you. The Instant Pot transforms the way we can cook a classic chicken and stuffing casserole, turning it into an effortless chicken dinner with delightful results.

This amazing appliance significantly cuts down cooking time, so you're not left waiting to dig in. The pressure cooking method ensures that the chicken comes out incredibly tender, soaking up all the rich flavors of the herbs and broth.

And the convenience of using just one pot means less cleanup, giving you more time to enjoy with your loved ones. It's a win-win-win!

Step-by-Step Directions for Instant Pot Chicken and Stuffing Casserole

  • Step 1: Heat an 8-quart Instant Pot on the sauté setting. Melt the butter and add the chicken. Sauté until lightly golden. Cancel the sauté setting.

Tip: If any chicken bits are stuck to the pan, pour a splash of chicken broth in and scrape the pan with a wooden spoon to loosen, preventing the burn notice. Check my tips on how to avoid the Instant Pot Burn Notice.

  • Step 2: In a medium-sized bowl, whisk the cream soup, sour cream, and chicken broth together to combine.

  • Step 5: Pressure cook on high pressure by pressing the manual button and setting the time to 5 minutes.
  • Step 6: When the pressure-cooking time is complete, do a quick release by pushing the pressure valve to the open position. Press the cancel button. When the valve falls, carefully open the lid and, using potholders, remove the inner pot from the appliance so the thick sauce does not burn on the bottom.
