  • stew meat cut into bite-size pieces: The star of the dish, stew meat becomes incredibly tender under pressure. I like to buy it in bulk and divide it before freezing into recipe size portions.
  • onion and garlic: Provides a sweet and aromatic base flavor adds depth and a punch of flavor. You will find onion and garlic in most of my savory recipes.
  • salt and pepper: Enhances the overall taste of the dish.
  • bay leaf: Infuses the dish with a subtle layer of flavor that you can not get with any other herb.

Step-by-Step Directions

  • Step 1: Turn the Instant Pot on the sauté setting and melt the butter. Add the diced onion and sauté until translucent. Add the garlic and sauté for 1 minute. Cancel the sauté setting.

  • Step 2: Add the stew meat, salt, pepper, and bay leaf to the Instant Pot. Pour the beef broth in and stir.

  • Step 3: Twist the lid on and turn the pressure valve to the sealing position. Press the manual button and set the pressure-cooking time to 15 minutes.
  • Step 4: Once finished pressure cooking, do a quick release. Carefully open the lid.

  • Step 5: In a small bowl, mix the cornstarch and water together until dissolved and lump-free. Pour into the pot and mix to combine.
  • Step 6: Press the sauté button again and bring to a boil, occasionally stirring until the gravy has thickened.

Ingredients  

  • 1 tablespoon butter
  • 2 lbs. beef stew meat (cut into bite size pieces)
  • 1 medium onion (peeled and diced)
  • 1 tablespoon minced garlic
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 medium bay leave
  • 2 ½ cups beef stock
  • 3 tablespoons cornstarch
  • 3 tablespoon cold water

Instructions 

  • Turn the Instant Pot on the sauté setting and melt the butter. Add the diced onion and sauté until translucent. Add the garlic and sauté for 1 minute. Cancel the sauté setting.
