Homemade Chimichangas Recipe

This Homemade Chimichangas recipe is the last recipe in my Mexican Food Fiesta roundup. These Mexican recipes are perfect for your Cinco de Mayo celebration or for any day you are craving authentic Mexican food.

As I mentioned these authentic Mexican recipes come from an old cook book I picked up at a thrift store. I can't wait to make more of the recipes and share them with you. Every Mexican recipe I have made from the cook book has turned out perfect.

These homemade Chimis are made with shredded beef. You could use my crock pot shredded beef recipe to fill your Chimichangas like I did or you could use shredded chicken, pork or even make a vegetarian version filling your chimichangas with beans and cheese.

How to Make Homemade Chimichangas

Ingredients

  • 2 cups Crock Pot Shredded Beef recipe
  • ¼ cup diced green chilies
  • ½ cup black beans
  • 2 teaspoons chili powder
  • ¾ cup shredded cheese
  • ½ cup sour cream
  • 6-10 small flour tortillas
  • 2 cups vegetable oil
  • Sour cream
  • Pico de Gallo

Directions

  1. In a bowl mix the first 6 ingredients.
  2. Spread 2 heaping tablespoons of filling down the center of a flour tortilla.
  3. Fold the tortilla burrito style securing with a tooth pick.
  4. Repeat with remaining ingredients.
  5. Heat the oil in a skillet and fry the Chimichangas until golden.
  6. Drain on a paper towel.
  7. Serve with your favorite Hispanic dish or as an appetizer.
  8. Serve with sour cream, homemade Pico de Gallo and refried black beans.
  9. Makes 8-10 Chimichangas
