Freezer Meals Minestrone Soup
Here is another great freezer meal recipe to help you with your fall and winter meal planning. Freezer Meals Minestrone Soup is a wonderful soup recipe for those chilly fall and winter days when you need to knock the chill off.
Nothing warms my soul when it is cold outside more than a big bowl of homemade soup. Minestrone soup is one of my favorite soup recipes. Minestrone soup is made with beef stew meat, fiber rich garbanzo beans, diced tomatoes, zucchini and a bunch of spices that give this easy crock pot soup recipe all it's flavor.
Soup Spices
Spices are so important when it comes to seasoning homemade soup. Spices are what adds the flavor notes of the recipe you are making. Minestrone soup would just be a plain old beef soup recipe without the diced zucchini, thyme and parsley.

The holidays are fast approaching. This is a good time to start meal planning with freezer meals. If you make one or two freezer meals every week your freezer will be stocked full of easy meals for the busiest time of the year when getting dinner on the table can be more difficult.

How to make Freezer Meals Minestrone Soup
Ingredients
- 1 pound beef stew meat cut into bite size pieces
- 16 ounce can garbanzo beans, drained and rinsed well
- 1 small onion diced, about ½ cup
- 1 cup diced zucchini
- 2 - 14.5 ounce cans diced tomatoes
- 2 teaspoons dry parsley flakes
- 1 teaspoon dry thyme
- 1 teaspoon ground black pepper
- ½ teaspoon salt
- 2 cups beef broth
- 1 cup elbow macaroni
Directions
- Place the first 9 ingredients into a one gallon freezer bag.
- Remove air and freeze flat.
To cook Freezer Meal Minestrone Soup on Stove
- Thaw the bag in the refrigerator over night.
- Pour the ingredients of the bag into a large pot.
- Add 2 cups beef broth.
- Bring to a boil, reduce heat to a simmer and cook until the meat is cooked through and tender, about 2 hours depending on the size of the meat pieces.
- 15 minutes before ready to serve add 1 cup of elbow macaroni to the pot and stir.
- Cook until the macaroni is tender.
- Makes about 6 servings.
