Ground Beef Freezer Meals
Ground beef freezer meals are very economical. Buying ground beef in bulk then stocking the freezer with ready made freezer meals will help you get dinner on the table during the hectic school year.
Dinner time can really be stressful if you don't have a plan in place. When you have a few pre-made meals in the freezer all you need to do is pull one out and let it thaw before cooking. Then you won't be running around an hour before dinner time trying to figure out what you can cook for the family.
How to Make Freezer Meals: Hamburger Soup
- 3 cups browned ground beef, drained well (about 2 pounds uncooked ground beef)
- 14.5 ounce can Italian style diced stewed tomatoes
- 2 cups beef broth
- 2 cups frozen vegetable mix of choice
- 1 cup corn kernels
- 1 ½ tablespoons Worcestershire sauce
- 2 teaspoons minced garlic
- 1 teaspoon dry thyme or ½ teaspoon fresh thyme
- 1 teaspoon black pepper
- ½ teaspoon salt
- 1 small bay leaf
- 2 cups uncooked large elbow macaroni
- Place all the ingredients, except the elbow macaroni into a gallon size freezer bag.
- Remove all air and flatten.
- Freeze flat on a cookie sheet.
- Once frozen remove the cookie sheet and store in the freezer until ready to cook.
- Use within 3 months.
- Makes 4-6 servings.
How to Cook Freezer Meals Hamburger Soup
- Remove the Freezer Meals: Hamburger Soup from the freezer and thaw overnight in the refrigerator.
- To cook the Freezer Meal Hamburger Soup on the stove pour the contents of the freezer bag into a large pot.
- Heat on medium-high until it comes to a boil. Reduce the heat and simmer for about 60 minutes.
- Add the elbow macaroni, increase the heat to high and bring to a boil. Boil until the macaroni is tender.
- Turn off heat and remove from hot burner. Serve with fresh crusty bread or crackers.
- Serves 4
How to cook Freezer Meals: Hamburger Soup in the Crock Pot
- Remove the Freezer Meals: Hamburger Soup from the freezer and thaw overnight in the refrigerator.
- Pour the contents of the freezer bag into a 6-quart crock pot turned on high.
- Cook 3-4 hours until piping hot.
- Add the macaroni to the crock pot and cook until the macaroni is tender, about 1 hour.
- Serves 4.

There is only two cups of beef broth plus liquid from tomatoes for this soup - doesn't this make more of a casserole dish than a
soup? By the time you add the macaroni, I would think that would absorb liquid as well. Do you have any pictures of what the soup looks like in a bowl? Thanks - sounds wonderful and know the family would love this! Just concerned about consistency.

This is a very thick and chunky soup. Sorry I don't have any pictures but they are coming soon. The pasta doesn't absorb that much liquid. If you like a more liquidy soup you could add another cup or two of broth. But save that till the end so you only make a small adjustment. After you add more liquid you will need to adjust the seasonings because the added broth will dilute the flavors of the seasonings.Enjoy!
