Hurst's has done it again with their new BBQ Style Cowboy Beans.

Slow Cooker Dried Beans

If you have been a reader for a while you know I love cooking dried beans in my crock pot. There are a couple of reasons why.

I don't like to soak the beans before cooking them. It's not that soaking dried beans is hard work.

It's just that I don't have the time to keep changing the soaking water or checking to make sure the dried beans haven't absorbed all the water, causing the beans to plump up and soften unevenly.

When I cook dried beans in the crock pot all I need to do is rinse the beans well and pour them into my slow cooker with the rest of the recipe ingredients.

Ingredients

  • 15.5 oz bag Hurst’s HamBeens® BBQ Style Cowboy Beans
  • 1 medium diced onion (about 1 cup)
  • 1 medium diced bell pepper
  • 1 cup dark brown sugar
  • 1 cup ketchup
  • ¼ cup yellow mustard
  • 14 oz package mini sausage
  • 4 cups chick broth
  • 3 cups of water
  • 3 tablespoons cornstarch plus 3 tablespoons cold water

Prep Work

Prep work for this Cowboy Beans recipe is minimal.

Prepping dried beans by rinsing under cold water
Prepping dried beans
  1. Peel the onion, slice and dice.
  2. Cut the cap off of the pepper. Slice the bell pepper in half, remove the seeds and core. Cut into thin slices and cut the slices into a fine dice.
  3. Open the bag of beans, remove the seasoning packet and set aside. Pour the beans into a colander. Check for any debris and discard. Rinse under cold water then drain.

  4. Open the package of mini sausage and rinse under cold water before adding to the crock pot.
  5. Pour the chicken broth and water over the ingredients and stir with a wooden spoon.
  6. Place the lid on the crock pot and turn it on high.
  7. Slow cook on high for 5-6 hours or until the beans are tender. If cooking on low cook for 8 to 10 hours.
