Now don't get me wrong I love a big hot bowl of homemade chicken noodle soup but sometimes I just want to get a little wild and amp it up a bit with cheese filled tortellini.

The cheese tortellini makes this comfort food a little extra special on a cold winter night.

Because this Crock Pot Chicken Tortellini recipe is hearty enough to fill him up and warm him up on a cold winter night.

How to make Crock Pot Chicken Tortellini Soup recipe

Ingredients

  • 2-3 boneless chicken breast halves
  • 1 medium onion
  • 3 small carrots, cut into bite-size pieces
  • 1 large bay leaf
  • 5 cups low sodium chicken stock
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2-3 cups frozen cheese tortellini
  • handful fresh spinach leaves, torn
  • 15 oz can cannellini beans
  • salt and pepper to taste

Directions

  1. Place the first seven ingredients into a 4-quart crock pot and cook for 2-3 hours on high until chicken is cooked through.
  2. Remove the onion and discard.
  3. Pull chicken apart into bite-size pieces.
  4. Tear spinach leaves in half and add to the crock pot.
  5. Add the beans and tortellini to the crock pot.
  6. Cook 1 hour on high or until the tortellini is heated through.
  7. Salt and pepper to taste.
