I love Mexican food and eat it at least once a week. Quesadillas are so easy to make and the family loves tacos. I'm partial to chicken tacos myself but the rest of the family loves beef tacos.

One of the best things about making this Cilantro Green Chile Lime Sauce is that you just put all the ingredients into a blender and let the blender do the work for you.
Ingredients
- 1 packed cup of fresh cilantro
- ½ small onion
- juice of one lime
- 2 cloves of garlic
- 4 oz. can mild green chile's
- ½ teaspoon salt
- ½ teaspoon ground pepper
- 2 tablespoons water
Directions
- Place all the ingredients into a blender and pulse until smooth.
- Serve over white rice for easy cilantro lime rice or use as a sauce for your favorite Mexican dish like my Margarita Lime Chicken Rice Bowls recipe.
- Refrigerate any left overs and use within a week.
- Makes ½ pint.
