Chicken Tortellini Alfredo
Ingredients
- 1.5 lb. cooked chicken
- 19 oz bag frozen cheese tortellini
- 3 tablespoons unsalted butter
- 3 tablespoons unbleached all-purpose flour
- 3 cups heavy cream
- 2 cups finely shredded real parmesan cheese
- ½ teaspoon salt
- ½ teaspoon ground black pepper
- 2 cups fresh baby spinach leaves (optional)
- ¼ teaspoon red pepper flakes (optional)
- 1 teaspoon minced fresh parsley (optional)
Instructions
- Melt the butter in a large skillet and sauté the minced garlic. Do not brown the garlic.
- Add the flour to the skillet and quickly whisk it into the butter making a thick butter, garlic and flour paste.
- Add ½ of the heavy cream to the skillet and whisk the ingredients together until the flour and butter roux has dissolved into the cream. Pour the remaining cream into the pan and whisk together.
- Keep whisking as the sauce starts to thicken. Add the Parmesan cheese, salt, ground pepper, and minced parsley to the pan. Stir to combine.
- Whisk as the Parmesan cheese melts to keep it from scorching. Once the alfredo sauce comes to a low boil add the cooked chicken to the skillet. Stir the chicken into the alfredo sauce. Cook for a few minutes to heat up the chicken pieces.
- Add the cooked cheese tortellini to the pan and stir until the tortellini is covered in alfredo sauce.
- If using fresh baby spinach stir it in at this time. Toss the spinach with the ingredients until it is covered in creamy alfredo sauce.
- Remove the skillet from the heat and serve immediately.
- Serve with a side salad and some crusty bread.
