A serving of Spicy Cajun Chicken Fettuccine Alfredo on a green dinner plate.

This chicken alfredo is so easy to make when you use my homemade fettucine alfredo sauce recipe to make spicy alfredo sauce. It is the best alfredo sauce with milk you will ever make.

I have been making this creamy fettucine alfredo sauce with milk for years now. I use it to make all of my alfredo recipes.

How to make the spicy alfredo sauce

I love this homemade spicy alfredo sauce recipe. I love fettuccine alfredo and spicy Cajun chicken alfredo is just as easy to make.

I know you will never buy a jar of sauce again once you make this recipe.

I use my homemade alfredo sauce with milk as the base sauce and add all the spicy goodness with Cajun seasoning, chili powder and red pepper flakes.

Can you make Alfredo Sauce with milk instead of cream

Did you know you can make alfredo sauce without cream? Oh yes, it is possible and this recipe made with milk is going to rock your world. I promise!

It is thick, creamy and rich. It will be the best alfredo sauce recipe you have ever eat.

You may be doubting my opinion of how awesome this alfredo recipe tastes.

I understand completely so please head over to my easy homemade Fettuccine Alfredo Sauce with milk recipe and check out more of the positive comments I have received over the years.

Lynn said I tried this last night, and it was super simple and the most delicious alfredo sauce I have ever had. I love alfredo and have tried many recipes, but none compared to yours! Thank you so much for the recipe

Alana said Scrolled all the way to the bottom of the longgggg list of comments just to say. WOW! Delicioussssssssssss, thank you! Used whole wheat flour, was so darn good, ever going back to a jar would be insane!

Barb T said I cannot believe I found this recipe! I can't tell you how often I've looked for a decent Alfredo sauce but hated the idea of loading cream, butter and cream cheese in one pot!

Ingredients

You will need a couple of pieces of boneless skinless chicken, cajun seasoning and butter, milk, Parmesan cheese, salt, pepper, chili powder, and red pepper flakes. Simple basic ingredients you probably have on hand.

Spicy Chicken Alfredo Sauce ingredients in small bowls.

You can adjust the spiciness factor by adjusting the amount of red pepper seasoning you add to the sauce.

  • Chicken: We like white boneless skinless chicken. You can also use boneless skinless chicken thighs.
  • spicy flavorings: Cajun seasoning, chili powder and red pepper flakes
  • olive oil: to sauté the chicken and prevent it from sticking to the skillet.
  • fettuccine pasta: You can use other shape of pasta if need be.
  • alfredo sauce: butter, all-purpose flour, ground black pepper, salt, whole milk, real Parmesan cheese.

Directions

Step 1: Cook the fettuccine pasta following the directions on the package. Drain well and set aside.

Step 2: Season the chicken on both sides with the Cajun seasoning. I like Badia Louisiana Cajun Seasoning. Set aside for 15 minutes to season the chicken.

Step 3: Heat the olive oil in the skillet over medium heat. Place the chicken into the skillet and cook until the chicken is golden browned and cooked through the center and has reached at least 165 F. degrees on a instant read meat thermometer.

Place the cooked chicken on a plate and allow to rest for a few minutes before slicing into thin slices or cutting into bite sized cubes.

Make the spicy alfredo sauce.

You can find step by step photos and a video on how to make my creamy alfredo sauce here.

Step 1: Melt the butter in a large deep skillet or a sauce pan. Add the flour, salt and ground black pepper, Make a roux by whisking the flour and seasonings into the melted butter to create a thick paste.

Step 2: Continually whisk the mixture for about 3 minutes as the flour and butter mixture cooks. Slowly pour the milk into the flour mixture while whisking. Whisk well to blend the thickened roux into the milk until all lumps are gone.

Step 3: On medium heat slowly bring the alfredo sauce to a boil while whisking. Once a low boil has been reached add the shredded real Parmesan cheese to the pan and whisk well until the cheese has melted.
Continue to boil the alfredo sauce over medium high heat until thickened. Once thick remove the pan from the heat.

Homemade alfredo sauce in a skillet before mixing with pasta and Cajun chicken.

Step 4: Stir the ground chili powder and red pepper flakes into the alfredo sauce.

Whisking chili powder and red pepper flakes into a thick alfredo sauce.

Taste the sauce and adjust the spiciness by adding more red pepper flakes if you would like the sauce to be extra spicy.

Combining the ingredients

Pour the spicy alfredo sauce over the pasta in a serving bowl or the skillet you cooked the chicken in.

Mixing the spicy alfredo sauce with fettuccine pasta.

Add half of the Cajun chicken, about a ¼ cup of shredded Parmesan cheese, a sprinkle of red pepper flakes and a large pinch of dried parsley flakes to the skillet.

Mixing cajun chicken pasta in a serving skillet.

Toss the pasta and chicken to coat with the alfredo sauce.

Expert Recipe Tips

  • 30 Minute dinner recipe: This recipe can be made in thirty minutes or less if you season the chicken and cook the fettuccine pasta ahead of time.
  • How to know when chicken is done: Cook the chicken until the center thickness has reached 165 F. degrees on an instant read thermometer for the juiciest boneless chicken..
  • Use whole milk for the thickest and richest alfredo sauce. You can also make homemade alfredo sauce with half and half.
  • Use a block of real Parmesan cheese: Real Parm has the best flavor and it will melt into the alfredo sauce and not make it grainy like powdered Parm.

Arlene this fettuccine looks so delicious! I love fettuccine alfredo, but haven't found a very good recipe so I always order it when I go out to eat. I'll try this recipe as I also like the spice the chicken will bring. Pinning this!
