Chicken Mango Fresh Spring Rolls

Chicken Mango Fresh Spring Rolls are a light and easy back to school lunch, dinner or appetizer recipe.

Fresh Spring Rolls are also a great way to use up leftover chicken. Dip these fresh spring rolls in your favorite peanut dipping sauce or make a homemade Sweet Chili Mango Sauce to dip these easy fresh spring rolls in.

What are Fresh Spring Rolls or Fresh Summer Rolls?

What are Fresh Spring Rolls or Fresh Summer Rolls you might be wondering? Everyone is familiar with an egg roll or a spring roll if they have ever eaten Chinese food.

A Fresh Spring Roll is the raw version of a spring roll. Fresh Spring Rolls have not been fried and are filled with ingredients that can be eaten raw, like lettuce, vegetables, and cooked rice.

You can make vegetarian fresh spring rolls or add a cooked protein like grilled chicken, shredded pork or cooked shrimp.

Vietnamese Fresh Spring Rolls or Thai Fresh Spring Rolls are traditionally served with a peanut dipping sauce.

Sweet Chili Mango Dipping Sauce

A few weeks ago I had a bunch of fresh mango that needed to be used before they started to brown.

I decided to make a sweet chili sauce recipe with one. The sweet chili mango sauce tasted so good on grilled chicken I knew it would be the perfect dipping sauce for this fresh spring roll recipe.

Traditionally fresh spring rolls are filled with rice noodles but they are just as good filled with white rice.

If you have never made fresh spring rolls I want to show you just how easy it is to make this very light and delicious appetizer recipe.

1. Step one filling a fresh spring roll wrapper:

The first thing you will want to do is cook the rice, and drain it in the handy colander like bag it comes in. Once the rice has cooled a bit open the bag and dump it into a bowl.

I like to use instant rice to cut back on the cooking time. You can also use perfect cooked white rice. Check out how I make it.

2. Step two in filling a fresh spring roll wrapper

Next gather all your prepared ingredients. Wash the lettuce and dry, slice the chicken and mango into stick like pieces.

Wash, dry and shred the cabbage. Place all the ingredients in individual bowls in an easy to reach position on your kitchen counter.

3. Step three to making Fresh Spring Rolls

Dip the rice Spring Roll wrapper in warm water and lay it on a very damp cutting board or flat surface. Start layering your fresh Spring Roll fillings on the softened Spring Roll wrapper.

4. Step four is rolling the Spring Roll wrapper around the fillings.

Roll the rice spring roll wrapper over the filling so it completely covers the filling, carefully fold the side pieces of the wrapper towards the center and roll the spring roll over to the farthest edge of the wrapper.

How To Make Chicken Mango Fresh Spring Rolls

Ingredients

  • 1 bag Success® Boil-in-Bag Rice, cooked per package directions
  • 1 package Spring Roll Wrappers
  • 2 grilled boneless chicken breast halves, thinly sliced or about 1 ½ cups cooked chicken pieces
  • 1 mango, thinly sliced into sticks
  •  about 10 medium lettuce leaves, rib removed and torn into pieces
  • 1 cup shredded red cabbage
  • Sweet Mango Chili Sauce or your favorite Spring Roll dipping sauce

Directions

  1. Cook the Success® Boil-in-Bag Rice following the directions on the package, drain and pour into a bowl. Set aside.
  2. Prepare a plate or baking sheet by laying a piece of plastic wrap that has been sprinkled with water to prevent the fresh spring roll wrapper from sticking.
  3. Assemble all the fresh spring roll ingredients.
  4. Assemble one Chicken Mango Fresh Spring Roll at a time on a clean, wet wooden cutting board.
  5. Dip one spring roll wrapper into a bowl of warm water and place on the cutting board.
  6. Lay a few small pieces of lettuce on the edge of the wet spring roll wrapper nearest you.
  7. Add one tablespoon rice, two slices of chicken, two slices of mango,and some red cabbage.
  8. Top the filling with another layer of lettuce.
  9. Roll the rice wrapper over the filling so it completely covers the filling, carefully fold the side pieces of the wrapper towards the center and roll the spring roll over to the farthest edge of the wrapper.
  10. Place the rolled spring roll onto the baking sheet once wrapped.
  11. Repeat with remaining wrappers and filling.
  12. When placing each rolled spring roll on the baking sheet do not allow the spring rolls to touch or they will stick together and break open when serving.
