This rich and creamy Chicken Alfredo Gnocchi Soup is the perfect comfort food. Packed with tender chicken, pillowy gnocchi, and a velvety Alfredo broth. This 30 minute one-pot meal is easy to make and sure to satisfy the whole family.

30 Minute Soup Recipe

If you are looking for a delicious meal you can make in under an hour this creamy alfredo soup recipe fits the bill.

Its made using pre-cooked chicken, jarred or homemade alfredo sauce, broth, fresh spinach and store bought gnocchi.

Yes, you can even make the alfredo sauce from scratch and still get dinner on the table in 30 minutes.

Chicken for the recipe

I’m using grilled boneless, skinless meat for this recipe. My George Foreman countertop grill is my go-to for a quick and easy way to get that delicious charred flavor.

No countertop grill? No problem! You can cook it in a skillet, air fryer, or even use leftovers from a previous meal—rotisserie works great too.

If you’re making it fresh, season 1 to 2 pounds with salt and pepper before cooking. Use your preferred method and cook until the center is no longer pink. An instant-read thermometer should read 165°F for safety. Let it cool slightly, then slice into bite-sized pieces.

Ingredients Needed

  • Cooked chicken: If you are using leftovers cooked chicken or a rotisserie you will need about 2 cups of cubed meat.
  • Alfredo sauce: I used my homemade sauce recipe to make this soup recipe. You can use the same amount of your favorite jarred sauce if you can't make homemade.
  • Broth: Store bought or homemade.
  • 16 oz. package gnocchi: you can find potato gnocchi on the pasta aisle in most grocery stores. Or you can try your hand at making Homemade Potato Gnocchi.
  • herbs and seasonings: bay leaves, dried thyme, Italian seasoning, salt and black pepper.
  • Fresh baby spinach or kale: I prefer baby spinach. If you are a kale fan either green works well.
  • Parmesan cheese garnish (optional): If you are making homemade alfredo you will already have fresh Parmesan cheese on hand. Grating a little over each bowl when you serve it adds another layer of cheesiness to the soup.

Recipe Prep

Alfredo sauce: If using my homemade sauce recipe you will also need those ingredients also and to make the sauce recipe before you start the soup recipe. You can even make it ahead of time and keep it refrigerated until you're ready to make the soup.

I used my Alfredo Sauce with half and half (linked above) or you can also use my Alfredo sauce with milk. This cheesy white sauce refrigerates well so you could make it a day or two before you plan to make this soup.

Step by Step Directions to Make the Soup

  • Step 1: In a large pot mix the Alfredo sauce with 1-2 cups of broth. The amount of broth needed will depend on the thickness of the sauce you are using. My homemade sauce is much thicker that a jar of store bought. Add the minced garlic, dried herbs, salt, black pepper and whisk to combine.

  • Step 2: Add the cooked chicken, potato Gnocchi and bay leaves to the soup pot. Stir to combine.

  • Step 3: Cook over medium high heat until boiling. Reduce heat and simmer for 15 minutes.

  • Step 4: Add the kale or spinach leaves to the pot and simmer for another 5 to 10 minutes or until the greens have wilted.
  • Step 5: Serving: Sprinkle each serving with shredded Parmesan cheese and serve with a thick slice of buttered bread.

Optional Garnishes

  • Cheese: I used Parmesan cheese but you could use another mild white cheese if your out.
  • Homemade Croutons: Croutons are delicious on a rich and creamy soup like this. Use leftover focaccia or stale bread to make them.

  • Use rotisserie chicken for an easy shortcut.
  • If the soup thickens too much upon standing, add a little extra milk or broth to loosen it up.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove over low heat.

Ingredients  

  • 2 cups cubed cooked chicken
  • 2 cups alfredo sauce
  • 2 cups chicken broth (you may need more or less depending on the Alfredo sauce thickness)
  • 16 oz. package Gnocchi
  • ½ teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon dried thyme
  • ¼ teaspoon black pepper
  • 2 cups baby spinach
  • 1 cup Grated Parmesan cheese (optional)

Instructions 

Recipe Prep

  • If using homemade alfredo sauce make it before starting the soup recipe.
  • Cut the cooked chicken into bite sized cubes.

Make The Soup

  • Mix the alfredo sauce with 1-2 cups of chicken broth. Homemade Alfredo sauce may be thicker than a jar of store bought.
  • Add the minced garlic, dried herbs, salt, the black pepper to the pot and whisk to combine.
  • Add the cubed cooked chicken, potato Gnocchi and dried bay leaves to the soup pot. Stir to combine.
  • Heat the soup over medium high heat until boiling. Reduce and simmer for 15 minutes.
  • After 15 minutes add the fresh kale or spinach leaves to the pot. Continue to simmer for another 5 to 10 minutes or until the greens have wilted.
  • Serve in a soup bowl sprinkle each serving with shredded Parmesan cheese and serve with buttered Italian bread.
