It actually doesn't have to be cold outside for me to dig into a big bowl of homemade soup. I eat soup all year long and I love to make soup in my crock pot.
Crock Pot Soup recipes are so easy to make and you can make a delicious crock pot meal of homemade soup with only 2 boneless chicken breasts and a few canned food items you probably already have in the pantry.
I used chopped onion, sliced celery, chopped garlic, sliced fresh carrots, canned diced tomatoes, and canned garbanzo beans to make this crock pot chicken soup recipe.
I threw some fresh spinach leaves in because I had some leftover and I knew I could use a little extra vitamins and minerals because we all can use an extra dose of vitamins during the winter.
Basic Soup Ingredients
I always keep chicken broth, garlic, onions, celery, and carrots on hand for whenever I feel like making soup. With these basic soup ingredients on hand, you can make all kinds of soup recipes.
Truth be told I was battling a chest and head cold and needed a big bowl of healthy hot soup to make myself feel better.
I didn't feel like going to the store because I was sick and I literally went into my pantry to see what canned ingredients I already had on hand to make this Crock Pot Chicken Garbanzo Bean Soup recipe.
I always have frozen boneless chicken in the freezer because I stock up when boneless chicken is on sale.
Then I freeze the boneless chicken in meal size packages.
I usually freeze the chicken in 4 breast and 2 breast packages.
Four chicken breasts are enough for me to make a meal for myself, my husband and my daughter.
The 2 breast packages are one hand to make crock pot chicken recipes or crock pot soup recipes.
It is amazing the number of crock pot chicken recipes you can make with just 2 boneless chicken breast halves.
Chicken Garbanzo Bean Soup Ingredients
- 2 boneless chicken breasts (about 1 lb boneless chicken meat)
- 1 cup sliced celery, (use the tender leaves at the center of the celery stalk if you have them)
- 5 large carrots, sliced
- 1 small onion, chopped
- 1 large Bay Leaves
- 1 tablespoon of chopped garlic
- 2 teaspoons dried thyme or a small bunch of fresh thyme sprigs
- 14.5 ounce can of diced tomatoes
- 15.5 ounce can garbanzo beans, drained and rinsed
- 8 cups of chicken broth (two 32 ounce cartons)
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- ½ cup long grain white rice, rinsed well and drained
- large handful of fresh baby spinach leaves
Directions Chicken Garbanzo Bean Soup
- With a sharp knife carefully cut the boneless chicken into cubes.
- Place the cubed chicken meat, celery, sliced carrots, chopped onion, dry bay leaves, chopped garlic, un-drained can of diced tomatoes, the drained and rinsed garbanzo beans into an 8-quart crock pot.
- Add the chicken broth and salt and pepper to the crock pot. Stir to combine.
- Place the lid on the crock pot and cook on high for 2 to 2 ½ hours. After 2 to 2 ½ hours add the long grain white rice to the crock pot.
- Stir the rice into the broth to prevent it from clumping.
- Replace the lid and continue to cook for another 30 to 60 minutes or until the rice is just tender.
- Do not overcook or the chicken will be very dry and the rice will turn to mush.
- Right before you plan to serve the soup add a large handful of fresh baby spinach leaves to the crock pot and stir.
- Makes 6 to 8 servings.

Helpful tips to make Crock Pot Chicken Garbanzo Bean Soup
- Cubed chicken cooks very fast in the crock pot on high.
- I do not recommend cooking this recipe for more than 4 hours if the chicken is cubed, even on the low setting. Cubed chicken meat can dry out quickly.
- If you would like to cook this soup recipe on low for 4 to 6 hours leave the chicken breasts whole.
- Cook the soup for 4 to 6 hours on low. When ready to serve shred the chicken meat with two forks.
