Back when I was a child the best part of Summer was when my mom would buy a sweet Florida watermelon.
It was torture when she would shove that huge watermelon in the refrigerator and we had to wait for it to get cold before we could have some. Cold watermelon is like heaven on a hot Florida Summer day.
Biting into a big wedge of that sweet bright red flesh and feeling the sweet sticky watermelon juice run down my chin is a treasured memory. Now I get to watch my grandkids enjoy the same summer time pleasure. The kids in my family inhale an enormous amount of sweet juicy watermelon during the summer months.
Now as a Grammy I am a little neater when I eat watermelon. It's so much easier to keep that juice from running down my chin when I cut the watermelon up in chunks.
When Florida watermelons are in season I like to make fun recipes like this Watermelon Salsa. The kids prefer their watermelon in wedges but the adults love digging into a bowl of sweet and spicy Watermelon Salsa with our favorite chips.

How to Make Watermelon Salsa
Ingredients
- 5 cups finely diced Florida Watermelon
- ¾ cup finely diced Florida Yellow Pepper
- ¾ cup finely Florida Red Pepper
- ¼ cup finely diced red onion
- ¼ cup finely diced sweet onion
- ¼ cup finely diced Florida Jalapeno Pepper
- 2 large cloves of garlic finely diced, or 2 teaspoons minced garlic
- zest and juice of 2 limes
- 1 tablespoon finely diced cilantro
- 1-2 tablespoons finely diced mint
- 1 tablespoon sugar
Directions
- Place all the diced or minced ingredients into a large bowl.
- Zest and juice both limes and add to the bowl.
- Add the sugar and mix well.
- Cover and refrigerate at least 2 hours before serving with chips of choice.

- ¾ cup finely red bell pepper
- ¼ cup finely diced red onion

- ¼ cup finely diced jalapeno pepper
- 2 large cloves of garlic finely diced (or 2 teaspoons minced garlic)
- 2 whole zest and juice of 2 limes
- 1 tablespoon sugar
- 1 tablespoon finely diced cilantro
- 1-2 tablespoons finely diced mint
Instructions
- Place all the diced or minced ingredients into a large bowl.
- Zest and juice both limes and add to the bowl.
- Add the sugar and mix well.
- Cover and refrigerate at least 2 hours before serving with chips of choice.
