I love soup and even in the blazing hot Florida summer heat, I will eat soup for lunch or dinner.
I am so sick of the heat already. It has been one of the hottest summers so far with the heat index hitting 110 degrees almost daily.
August and September are usually the hottest months of the year down here in Florida, but this year June and now July has been unbearably hot.
Summer Squash Recipes
Squash season is in high gear and if you have a garden you are probably looking for ways to use up all the squash you have growing in your garden. If you don't have a garden but love squash you will love this Summer Squash Soup recipe. I used a combination of yellow long neck squash and zucchini squash.
If your not a zucchini fan you could make it with just yellow squash or vise versa.
Crock Pot Recipes for Two
This weeks crock pot soup recipe is brought to you by a reader request.
I know some of you have wanted to see smaller portion recipes.
Some of my readers are cooking for one or two.
Some of you are single and do not need to prepare recipes that feed 4 or more family members.
This crock pot Summer Squash Soup recipe will feed two adults with a bit left over.
Depending on how large of a serving you are serving. This Summer Squash soup recipe makes about 4 cups of soup.
The recipe can be doubled for a larger family
For those of you who would like to feed a family of 4 or more this Crock Pot Summer Squash recipe is easily doubled.
Double all the ingredients except the salt, pepper and dill weed. Once the recipe is finished cooking take a taste and adjust the seasonings as needed.
Vegetarian Crock Pot Soup recipe
Make this slow cooker squash soup recipe using vegetable stock and it is a very tasty vegetarian soup recipe.
I actually used vegetable stock when I make it.
But if you're not following a vegetarian diet you can use chicken stock.
Gluten Free Crock Pot Soup Recipes
I do not follow a gluten-free diet. I do follow a low carb diet most of the time.
I have many recipes that would be considered gluten-free but because I do not know all the ins and outs of where gluten is hiding I don't usually tag my recipes as gluten-free.

Recipe Prep
- Clean the squash: Scrub the squash under cold running water to remove any dirt.
- Cut the squash: With a sharp knife cut the ends off the squash. Slice each yellow squash or zucchini squash and cube.
Ingredients
- 1 cup cubed zucchini
- 1 cup cubed yellow squash
- 2 cups vegetable or chicken broth
- ½ cup diced onion
- 1 tablespoon minced garlic
- 1 teaspoon of sea salt
- 1 teaspoon ground black pepper
- 1 teaspoon dill weed
- plus 4 ounces sour cream added at the end of cooking time.
Directions
- Place all the ingredients into a 4-quart crock pot and cook for 4 hours on high or 6 hours on low.
- Right before serving mix the sour cream into the hot soup.
- Place a dollop of sour cream on each serving and sprinkle with dill weed.
- Makes 2-4 servings. Can be doubled easily.
