I love easy holiday appetizer recipes like these Roasted Balsamic Tomato Garlic Bites. You can make the roasted Balsamic tomatoes ahead of time and then prepare them the day of your party.
Roasted Balsamic Tomato Garlic Bites recipe ingredients
Fresh Mozzarella Cheese
Grape tomatoes
Fresh garlic cloves
Extra virgin olive oil
Balsamic Vinegar
Sea salt
Pepper
Fresh basil leaves (optional)
Roast the tomatoes and fresh garlic with extra virgin olive oil, balsamic vinegar, salt and pepper to taste.
Stack a small square of mozzarella cheese on top of a cracker and top the cheese with about ½ teaspoon of the roasted balsamic tomatoes and garlic.
Add a ribbon of fresh basil and sprinkle some sea salt on top.
Pop one in your mouth for a little taste test!
Ummm a little bite of heaven.
Roasted Balsamic Vegetables
I love roasting vegetables in balsamic vinegar.
A little olive oil and balsamic vinegar tossed over the tomatoes and garlic or any vegetable for that matter does something magical as the natural sugars from the roasting vegetables and the balsamic vinegar cooks down.
There is no other flavor like it. It is a sweet and tangy flavor you won't find anywhere else.
How To Make Roasted Balsamic Tomato Garlic Bites
Ingredients
- 2 tablespoons extra virgin olive oil
- 3 tablespoons balsamic vinegar (buy the best you can afford)
- ¼ teaspoon freshly cracked pepper
- 16 oz block of fresh mozzarella cheese
- 1½ cups cherry tomatoes, sliced into circles
- 3 large garlic cloves, roughly chopped
- Crackers (I used Triscuit crackers here but Ritz cracker would be just as good.)
- sea salt to taste
- fresh basil leaves for garnish
Directions
- Preheat oven to 400 F. degrees.
- In a small bowl mix the olive oil, balsamic vinegar, salt, and pepper, set aside.
- Slice the tomatoes into little circles.
- Peel, crush and roughly chop the garlic.
- Add the tomatoes and garlic to the bowl with the oil and vinegar mixture.
- Toss well and pour out onto a shallow baking pan.
- Roast for 15 minutes occasionally tossing.
- Increase the oven temperature to 450 F. after the 15 minutes are up.
- Roast an additional 15 minutes tossing occasionally.
- Remove from oven.
- Top each cracker with a square of mozzarella cheese, about ¼ of a teaspoon of the roasted tomatoes and garlic.
- Top each cracker with a ribbon of basil and a sprinkle of sea salt.
