This Pork Apple Quinoa Bowls recipe brings together some of my favorite flavors.

The sweet and tart flavor of the apple goes so well with tender and juicy pork.

I can't even begin to tell you how tender the Smithfield Marinated Fresh Pork Loin turns out when you saute it. My fork cut through each piece like it was butter-no knife is needed.

I added some fresh baby spinach leaves and asparagus for a healthy dose of spring.

I always try to take advantage of in-season vegetables when I am planning my recipes.

Asparagus is in season now and I have been enjoying it for a couple of weeks. If you don't like asparagus you could add some fresh cauliflower or broccoli florets instead.

What I really loved about the Smithfield Marinated Fresh Pork - Hardwood Smoked Bacon & Cracked Black Pepper Loin that I used for this recipe was the real pieces of bacon in the marinade.

As soon as you open the package you can see smell the aroma and see the pieces of bacon that is in the Hardwood Smoked Bacon & Cracked Black Pepper marinade.

I made any easy Spicy Mustard Dressing to drizzle over the Pork and quinoa but you could eat it without the dressing.

It is still delicious but the Spicy Mustard Dressing adds a nice little zing to it.

I've included the Spicy Mustard Dressing recipe in the notes of the recipe below.

How to Make Pork Apple Wilted Spinach Quinoa Bowls

  • small onion, diced
  • 1 teaspoon salt
  • 1 teaspoon ground pepper
  • 1 Smithfield Marinated Fresh Pork Hardwood Smoked Bacon & Cracked Black Pepper Loin, sliced into medallions
  • 12 asparagus spears, chopped
  • 2 teaspoons minced garlic
  • 1 large apple, diced
  • 2 handfuls of fresh spinach leaves, roughly torn
  • 1 teaspoon fresh Thyme, minced
  • 1 ¾ - 2 cups cooked quinoa or rice
  • Spicy Honey Mustard Dressing (optional)

Directions

  1. Sauté onion, salt, and pepper in a large skillet until translucent and move to the side.
  2. Add the pork medallions to the pan and sauté 3-5 minutes on one side and turn and cook for 3 minutes.
  3. Add the asparagus and garlic to the pan and toss with the rest of the ingredients. Sauté for one to two minutes.
  4. Add the diced apples, spinach and thyme to the skillet and toss.
  5. Continue sautéing until the spinach has wilted then add the cooked quinoa to the pan.
  6. Sauté for 3 minutes or until the quinoa has heated.
  7. Serve in a bowl with spicy honey mustard dressing if desired.
  8. Makes four servings.

Ingredients  

  • 1 small onion (diced)

Ingredients
  • 3 tablespoons spicy mustard
  • ¼ cup honey
  • ¼ cup olive oil
  • ¼ cup red wine vinegar
  • ¼ teaspoon fresh cracked pepper
Directions
  1. Place all of the ingredients into a jar with a tight fitting lid and shake until combined.
  2. Drizzle over each serving of Pork Apple Wilted Spinach Quinoa Bowls if desired.

    I love quinoa bowls, but I've never made them with pork before! Pork and apples are such a great combination, this is such a great healthy dinner idea. My clients would love this!
