Instant Pot Spicy Shredded Pork

Shredded pork is so easy to make. Instant Pot Spicy Shredded Pork is tender and delicious. Spicy shredded pork can be used for many of your favorite Mexican recipes like pork tacos or nachos.

It is easy to make shredded or pulled pork with only 5 ingredients (one is water or broth) in the Instant Pot that is packed full of spicy flavors from canned green chiles.

It is amazing how much flavor a little can of peppers can add to almost any recipe.

Your favorite jar of salsa, some taco or pork carnitas seasoning, and diced chilies is all you need to make this tender shredded pork.

The flavorful shredded pork is perfect for Taco Tuesday.

If your not that into tacos you can make all kinds of easy meals with a batch of shredded pork that has been flavored with spicy Mexcian food seasonings and ingredients.

Taco's, burritos, or Quesadillas come right to mind.

Recipe Substitutions

What can you use to make this recipe if you don't have a boneless pork loin?

  • I made the shredded pork recipe with 2 lbs. of pork loin I had in the freezer.
  • You could substitute a boneless pork roast or even pork chops to make this recipe.
  • If using a boneless pork roast cut the roast into smaller pieces and cook on manual for 90 minutes like I did when I make Instant Pot Pulled Pork using a boneless pork roast.
  • If using thick cut pork chops for this recipe there is no need to change the cooking time.

Ingredients

  • 2 lbs pork loin or boneless pork roast
  • an envelope of Taco or Pork Carnita seasoning
  • 1 cup chunky salsa
  • 7 oz. diced green chilies, drained
  • 1 cup water or chicken broth

Prep Work

The recipe has minimal prep work.

  • Cut the pork loin or pork roast into pieces that will fit inside the inner pot of the Instant Pot you are using.
  • Brown the pork in the Instant Pot on the saute setting (optional).
  • Open the can of chilis and drain the liquid.

Tips for cooking pork

  • Always allow pork to rest before slicing or shredding. If you try to shred the pork meat while it is still hot shredding will be difficult. When the pork meat is hot and hasn't had a chance to rest the meat will resist shredding.
  • If you don't want shredded pork you can slice the pork instead of shredding it and serve it that way.
  • Do not scrape the bottom of the pot if you notice any burnt pieces stuck to the bottom.

Directions

  • Brown the pork on the saute setting of the Instant Pot. This is optional so you can skip this step if you like.
  • Open the envelope of seasoning and sprinkle over the pork.
  • Add the cup of chunky salsa and pour the can of drained green chiles into the pot. Pour the water or broth in.
  • Use a wooden spoon or tongs to toss the pork to help with dissolving the powdered seasoning mix into the liquid.
  • Place the lid on the pressure cooker and twist it to secure the lid tightly. Push the valve to the sealing position. Press the manual button and set the pressure cooking time to 12 minutes.
  • After the pork has finished pressure cooking let the pressure naturally release for 5 minutes.
  • After 5 minutes carefully push the valve to the releasing position. Once all of the steam has released and the pin has dropped twist the pressure cooker lid off away from your face.
  • Remove the pork from the Instant Pot and place it on a rimmed tray. Without scraping the bottom of the pan pour the drippings from the pot over the meat. Allow the pork to rest for 15 to 20 minutes before cutting or shredding.

Can you freeze leftover shredded pork?

Leftover shredded pork freezes well. Place the leftovers into a ziplock bag or air airtight food-grade container and put in the freeze.

The frozen pork can be thawed and used for other recipes or for lunch or dinner.
