- Fresh vegetables: Peel and slice the vegetables as needed.
Step by Step Directions
- Step 1: In an 8 quart crock pot slow cooker combine the beans, diced tomatoes, carrots, celery, onion, minced garlic and seasonings.
- Step 2: Add the chicken and chicken broth and stir to combine.
- Step 3: Place the lid on and slow cook on high for 3 hours or low for 5 hours or until the chicken is cooked through the center to 165 degrees.
- Step 4: Remove the chicken from the slow cooker once done. Rest 5 minutes and then shred or cut into bit size cubes.
- Step 5: Return the chicken to the slow cooker. Add the kale or Spinach, the cooked egg noodles and the shredded Parmesan cheese. Stir to combine.
- Step 6: Place the lid on and cook for 30 minutes to melt the cheese and warm the noodles.
- Step 7: Serve with crusty bread.

- ½ cup sliced celery
- ½ cup sliced carrots

- 15.5 oz. cannellini beans (drained and rinsed)
- 15 oz. garbanzo beans (drained and rinsed)
- 14.4 oz. can diced tomatoes ( undrained)
- 1 cup fresh kale or fresh baby spinach leaves
- ½ cup fresh grated Parmesan cheese (plus more for garnish)
- 2 cups cooked wide egg noodles
