I have been freezing down here in Florida with all the cold weather that has hit us.
It's nothing like the rest of the country has been dealing with but when the temperature falls below 60 degrees us Floridians can't deal with it very well!
We look for every possible way to warm ourselves up.
One of the ways I like to knock the chill off the day is to serve a big bowl of crock pot soup for dinner.
I love soup and will eat it all year long - even during the scorching summer heat. Homemade soup is one of the most satisfying comfort foods to make and eat.
I've made a couple of different versions of Hamburger Soup. I've made Crock Pot Southwestern Hamburger Soup, Crock Pot Hamburger Soup with Pasta and now I've made this Crock Pot Hamburger Bean Soup.
I enjoyed each version of these hamburger soup recipes. Each new recipe came to be based on the ingredients on I had hand.
Each version of Crock Pot Hamburger Soup also makes a very easy Freezer Meal recipe.
The day I made this soup recipe I was out of pasta and replaced the elbow macaroni with cannelloni beans, which I always have on hand.
No cannelloni beans on hand? Substitute kidney beans, pinto beans or even garbanzo beans.
How to Make Crock Pot Hamburger Bean Soup
Ingredients
- 3 cups browned ground beef, drained well
- 1 cup frozen pepper and onion mix or ½ cup each chopped onion and green pepper
- 14.5 oz can Italian style tomatoes
- 15 oz can cannelloni beans, drained and rinsed
- 1 ½ tablespoons Worcestershire sauce
- 2 teaspoons minced garlic
- ½ teaspoon salt
- ½ teaspoon ground pepper
- 1 large bay leaf
- 1 teaspoon dry thyme
- 32 oz Beef broth
Directions
- Place the browned ground beef, vegetables, and beans into a 4 or 6-quart crock pot.
- Add all of the seasonings and then pout the beef broth into the crock pot. Use a large spoon to stir the hamburger soup ingredients until combined well.
- Slow cook the soup on low for 6 to 8 hours or high for 4 to 5 hours.
- Serves 6.
