This week got away from me and here it was Thursday morning and in a panic, I said to myself what do I have one hand that I can turn into a crock pot recipe?

One of the conveniences of having a well-stocked freezer and pantry is that odds are you can throw something together for dinner if you have to.
I love to buy boneless chicken breasts when they are one sale.
I break the packages down and freeze the boneless chicken breasts into meal size portions to use on days like this.

How to make Crock Pot Pineapple Chicken
This Crock Pot Pineapple Chicken recipe is a dump and go recipes. Dump everything into the crock pot and go!
As usual I used my favorite 6 quart crock pot. I've found that the 6 quart crock pot is the perfect crock pot size.
Because it is oval and 4 boneless chicken breast fit perfectly in one layer across the bottom you don't have to worry about losing heat when you open the crock pot to move the chicken breasts around to make sure all of the chicken breast cooks evenly.
I usually flip the chicken breasts once halfway through the cooking time and they turn out perfect every time.
Ingredients
- 1 cup dark brown sugar
- 1 can pineapple bits
- 2 large minced garlic cloves (optional)
- 4 tablespoons soy sauce
- 2 teaspoons cornstarch (optional)
- 4 boneless, skinless chicken breasts about 2 ½ pounds
Directions
- Turn the crock pot on high.
- Mix the brown sugar, pineapple bits, minced garlic, soy sauce, and cornstarch together in the 6-quart crock pot.
- Add the boneless chicken breast to the crock pot. Flip them over to cover with the sauce ingredients.
- Use a spoon to spoon some of the pineapples on top of the chicken breasts.
- Put the lid on and cook 4 hours high or until the chicken is cooked thoroughly. Serve over a bed of rice.
I served the Crock Pot Pineapple Chicken over a bed of rice.
You could also pull the chicken apart and make Pineapple Chicken Nachos, Pineapple Chicken Quesadillas, or even Pineapple Chicken Tacos.

Crock Pot Pineapple Chicken
Ingredients
- 1 cup dark brown sugar
- 20 oz can pineapple bits
- 2 large minced garlic cloves
- 4 tablespoons soy sauce
- 2 teaspoons cornstarch
- 4 medium boneless chicken (skinless chicken breasts about 2 ½ pounds)
Instructions
- Turn the crock pot on high.
- Mix the first 5 ingredients together in the crock pot.
- Add the boneless chicken breast to the crock pot. Flip them over to cover with the sauce ingredients.
- Use a spoon to spoon some of the pineapples on top of the chicken breasts.
- Put the lid on and cook 4 hours high or until the chicken is cooked throughly.
- Serve over a bed of rice.

Hi! I’ve never commented on a recipe before, but I felt like I really needed to this time. We have an abundance of boneless skinless chicken breast right now, because I got it on an awesome sale. It’s also extremely hot out and the idea of using my oven made me unhappy. I’ve never made boneless skinless chicken breast in my crockpot before, but I found this recipe and I’m SO glad I did! It’s so incredible easy and so few ingredients! My 13 yr old son was so excited to help make this! We had everything on hand and we even tasted the marinade before we added the raw chicken and it was delicious!
We used light brown sugar, because that’s what we had on hand, and I added a bit of minced onion and black pepper, and we also doubled the recipe and invited my mother over for dinner. It’s currently in the crockpot and the smell is drool inducing! Thank you so much for posting this recipe. I have a feeling this is going to become a staple in our household!

Can you use fresh pineapple?? (All ready have it cut up ). If so what replaces the juice that you would get from the can ?

There is not much juice in a can of pineapple bits. You could add 1/4 cup of water in place of the juice if it looks a bit dry.

If you were to cut the chicken into cubes prior to putting into the crockpot, would you need to adjust the time? Wondered about throwing this all together the night before then throwing in the crockpot in the morning before leaving home for the day and cooking on low?

You would definitely need to decrease the amount of cooking time when using cubed chicken. I have found that cubed chicken dries out very fast in the crock pot. I think if you left it cooking on low for a full 8 hours it would be way too long for cubed chicken.

I am going to make this awesome easy recipe and I know that my family will love having this dish over rice! On Sunday I forgot to put my Corned Beef in the Slow Cooker and I boiled it on the stove and cooked the other one in the Slow cooker and the boiled Corned Beef was not as good as the Slow Cooker one!
