Crock Pot Meatloaf

This easy Crock Pot Meatloaf recipe is a perfect summertime dinner recipe that will not heat up the house!

Crock Pot Recipes are perfect for the hot summer months when you dread turning on the oven to cook dinner!

Old Fashioned Meatloaf Like Mom Made

I decided I needed to update my mom's meatloaf recipe to a Crock Pot Meatloaf Recipe.

It wasn't hard to do. I just used my mom's favorite meatloaf recipe and cooked it in my trusty crock pot.

It turned out perfect and cooking the meatloaf in the crock pot made dinner time a breeze.

I am a child of the '70s and '80s and when I was a kid my mother would bake meatloaf with a can of tomato soup poured over the top. As the meatloaf cooked the tomato soup would turn into a lovely gravy we would spoon over homemade mashed potatoes.

Back then we ate a lot of family meals featuring ground beef. It was cheap and could be stretched to feed a big family. Sometimes when mom made meatloaf she would form it into hamburger patties instead of a loaf.

Then instead of baking it in the oven, she would brown the meatloaf patties in a skillet then pour the tomato soup over them. Then she would let them simmer on the stove until they were cooked through. 

I've made my moms meatloaf both ways over the years. Cooking those meatloaf patties doesn't take much time but you do have to stay near the stove to keep an eye on things.

Baking the meatloaf in the oven is a little easier since you don't have to keep such a close eye on the meatloaf as it bakes compared to simmering it in a skillet.

Making the meatloaf in the crock pot is so much easier than either cooking methods my mom used and you have the advantage of not heating up the house while using the crock pot and you don't have to stand watch over a hot skillet.

Crock Pot Meatloaf is the best of both worlds as far as I am concerned.

The best part of this Crock Pot Meatloaf made with tomato soup is when you dip a piece in the tomato soup gravy and then dip it in the homemade mashed potatoes. It is a little bite of heaven.

Mom's Crock Pot Meatloaf recipe
Crock Pot Meatloaf recipe made with a tomato soup sauce is an updated recipe from my mom. She'd make it old school style in the oven or in a skillet. We ate a lot of ground beef recipes when I was a kid. This was my favorite meatloaf recipe back then and still is to this day. Serve this easy crock pot meatloaf recipe with homemade mashed potatoes and a vegetable side.

Ingredients  

  • 2 pounds ground beef
  • 1 ⅓ cup Italian Bread Crumbs
  • 1 large egg
  • ¼ cup diced onion
  • ¼ cup sweet red pepper (diced)
  • 1 teaspoon minced garlic
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 2 cans Campbell's Tomato soup

Instructions 

  • Mix all of the meatloaf ingredients except the tomato soup in a large mixing bowl until combined well.
  • Shape the ground beef mixture into a loaf that is a size that will fit inside your crock pot.
  • Place the meatloaf into the crock pot.
  • Pour the tomato soup over the meatloaf.
  • Cook 4 hours on high or 8 hours on low or until the meatloaf is cooked through in the center.
  • Serve with mashed potatoes and green beans.

    Wow, never would have guessed meatloaf in my crock pot would turn out looking so yummy. Wondering if if it would work to put my ootati s in with meat loaf especially if beef was extremely lean!

    This meatloaf recipe is outstanding! I've been making it for several years now. In fact this recipe is how I stumbled on to your blog and have been enjoying the blog ever since. I make the recipe exactly as written with the exceptions of using ground turkey(93/7%) and cream of chicken soup since my husband is not a fan of tomato soup.     Like you, meatloaf is comfort food from my childhood, and this is a great method for cooking it. These days, I tend to make mine with 1/2 ground turkey and bake it in muffin tins these days - it's much quicker, plus the individual portions are ready to pack in our lunches. And you're right - the tomato soup sauce enhances the experience so much!
