Crock Pot Beefy Macaroni and Cheese

My family loves macaroni and cheese. It's one of the five food groups right? After my Crock Pot Macaroni and Cheese recipe was such a huge hit with the family I knew I had to beef the recipe up a bit for the men in the family.
Crock Pot Macaroni and Cheese is fine for a side dish but when you add a pound or so of browned ground beef you have a warm and cheesy main course meal that will make everyone in the family happy.
How to make Crock Pot Beefy Macaroni and Cheese Recipe
- 1.5 pounds browned ground beef (about 3 cups)
- 14 ounce shredded sharp cheddar cheese
- 10 ounces Velveeta
- 2 cups uncooked elbow macaroni
- 1 can evaporated milk
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1 teaspoon black pepper
- ½ teaspoon salt
- 2 ½ to 3 cups milk
- Place all the ingredients and 2 ½ cups of the milk in a 6-quart crock pot and mix well.
- Cook on low for 3-4 hours, stirring after 2 hours.
- After 3 hours check the consistency and if it has thickened too much add the remaining ½ cup of milk to the crock pot and stir.
- Also, check to see if the elbow macaroni is cooked all the way.
- If the macaroni is tender turn the heat to warm and serve when needed.
- You can also sprinkle more cheddar or Velveeta over the top to make it more cheesy.

What if the noodles are done and cheese is melted but you added to much milk and it is not thickening up?

Just saw this comment. I hope the recipe turned out okay. You can always mix a tablespoon of cornstarch with a tablespoon of water and mix it in to the crock pot. Cornstarch is one of the best thickeners you can use that does not change the flavor of a recipe.

Awesome! That is what I thought but wanted to make sure. It actually did turn out really good but I think the texture and the fact that I didn't add the cornstarch made it not so great for my kids. That is my mistake though not the recipe. My crockpot works differently than most and I had to use a different kind of noodles that ended up cooking faster. However, I am definitely going to make it again. Thanks for the help!

Can you please tell me how to make this in a smaller crockpot about 4 quarts? Thank you so much I’m a disabled guy and I love using a crockpot recipes because it just so easy dump it cover it and cook it thanks so much Dave

This recipe makes 8 servings. You should be able to cut all of the ingredient amounts in half to make 4 servings in a 4-quart crock pot. Don't throw away the leftover evaporated milk from the can. Keep it until the end of cooking time in case the ingredients start to get dry. Add a little at a time to keep it creamy.

I dont have evaporated milk, can I substitute or leave it out?
