To help Eggland Best celebrate National Nutrition Month I whipped up this Cheesy Breakfast Bake recipe using EB eggs. Compared to ordinary eggs, Eggland's Best eggs have four our times more vitamin D, keeping your bones and muscles strong. They're beneficial to heart health, as they contain double the omega-3s and have ten times more vitamin E than ordinary eggs.

Cheesy Breakfast Bake ingredients

 

This Cheesy Breakfast Bake recipe is one of those recipe that you can customize for any of those picky eaters in your family. Instead of making it in a big baking pan you can make it in mini pie plates like I did.

 

I made this Cheesy Breakfast Bake for myself and Jordan (my future daughter in law), who is one of those picky eaters. She doesn't like things like tomatoes and spinach. I love adding some fresh veggies to my meals so I made two individual servings. One for Jordan with hash browns, bacon, cheese and EB eggs. For myself I made hash browns, sausage, spinach, tomato, cheese and EB eggs. 

You can make this recipe like I did or you can make it in one pie plate and customize it for your own tastes. Cheesy Breakfast Bake recipes can be made with so many different ingredients and flavor combos. Want to add a little spice? Mix some salsa in. Like more vegetables and no meat? Make a veggie Breakfast Bake instead.

 How to make a Cheesy Breakfast Bake

 

Ingredients

  •  hash browns or fried potatoes
  • 4 Eggland's Best eggs, beaten well with salt and pepper
  • cooked crumbled bacon,  sausage or cubed ham
  • 2 cups your favorite shredded cheese, divided
  • handful fresh spinach
  • 1 medium tomato, diced
  • salt and pepper to taste

 

Directions

  • Fry the hash browns or potatoes until crisp.
  • Oil the bottom of a pie plate.
  • Spread the hash browns or potatoes over the bottom of the pie plate.
  • Spread a layer of cheese over the potatoes.
  • Layer veggies, bacon, sausage or ham in whatever combo you choose ending with a layer of cheese.
  • Pour the beaten eggs over the top of all the ingredients.
  • Add another layer of cheese.
  • Bake in a preheated 375 degree oven for 20-30 minutes until the egg has set and the cheese is bubbling.

Ingredients  

  • Hash browns or fried potatoes

    I love your incredible eggs recipe and I will have to be making this recipe! It looks so delicious and filling. My favorite way to eat eggs are fried in butter and slightly soft!
