Pioneer Woman Cooks Flat Apple Pie
Friday I meant to post a sort of whats on the menu post but never got around to it. I had a busy weekend hosting a Maxwell House & Velveeta Cheese Spring Brunch House Party.
The House Party was a success.
The food, company and coffee was delish. I hadn't planned on baking any pies but after the House Party I decided to throw together Ree Drummonds Flat Apple Pie from her new cook book The Pioneer Woman Cooks.
I already had all of the ingredients on hand because I had planned on baking the pies during the week but never got around to it. I have had a lot going on in my life lately and sometimes I just don't get around to keeping my plans. The pie crusts I had made in advance last weekend and had them ready to go in the freezer.
I made a couple of changes to the pie filling recipe to suit my taste buds. Most apple pie recipes call for lemon juice. The juice is mixed in with the apples so they don't turn brown. It also adds a tangy tartness to the pie.
I didn't have any lemon juice on hand. I did happen to have a couple of limes laying around. After tossing my apple slices with the lime juice I decided to pour off the excess lime juice and use orange juice instead. The lemon and lime juice adds a tartness to the apple pie. Most people like this tartness. I do and I don't so sometimes I like to change things up a bit. A few months back I made a apple & cranberry tart. Orange juice is used in that recipe and I really enjoyed the flavor.
I just remembered something. I'm not sure if I wrote down my recipe for the tart. I am really bad about that. I will scribble the recipe on a piece of paper then when I want to find it again I can't. I really need to start a recipe journal!
First I want to say that the pie crust was the BEST pie crust I have ever made in my life. It was the flackiest pie crust ever! The flavor of the filling was great. Although my apples did not cook all the way through. I forgot to check the time they went into the oven so that is probably my fault. The recipe called for granny smith and I had a different type of apple on hand and used it. Next time..and there will be many next times I will use granny smith.
Sorry but I didn't take any pictures. The batteries were dead in my camera and I just couldn't wait for them to charge before I dived into that pie. I loved it.
Next weekend I am co hosting my daughter baby shower. I will be making Bakeralla's the Queen of Cake Pop's Red Velvet Cake recipe.
I'm making cupcakes instead of a cake. I'll let you know how it goes!
