Unicorn Rainbow Ice Pops
These Unicorn Rainbow Ice Pops are inspired by Unicorn ice cream everywhere! These pretty pastel colored unicorn ice pops will delight little girls and adults alike.
The Unicorn Rainbow Ice Pops recipe starts out with a no-churn vanilla ice cream recipe that has been colored with pretty pastel Americolor food coloring.
Americolor gel food coloring gives the most vibrant colors when it comes to food coloring.
Once you have colored the easy no-churn vanilla ice cream whatever colors you choose you then layer it into an ice pop mold and freeze over night.
You could serve the rainbow colored ice pops as they are.
I decided to dip each rainbow ice pop in a white chocolate coating and decorate with rainbow colored sprinkles. It's up to you how you decide to decorate your Unicorn Rainbow Ice Pops.
How to Make Unicorn Rainbow Ice Pops
Ingredients
- 1 can sweetened condensed milk
- 2 cups heavy whipping cream (1 pint)
- 1 Tablespoon vanilla extract
- Americolor Electric Pink, Royal purple, Teal and Green food coloring
- 5 twelve inch decorator bags
- Ice pop mold (best ice pop mold ever)
- 2 cups White Melting Chocolate or ( ¾ bag Wilton Bright White Candy Melts + 2 tablespoons Crisco shortening)
- Sprinkles I used three different types of sprinkle
- Pour the whipping cream into a large bowl (use a handheld mixer) or the bowl of a Kitchenaid mixer.
- Beat until stiff peaks form. Add the vanilla extract (i used my homemade vanilla extract) and gently mix the extract in on low.
- With the mixer on low slowly drizzle the sweetened condensed milk in and continue to mix on low until the condensed milk is completely mixed into the whipping cream.
- Divide the "ice cream" into five separate bowls. Fill 4 bowls with one cup of the mixture. Leaving one bowl uncolored for the white ice cream layer.
- Color the remaining 4 bowls with each of the food coloring colors
- Once the food coloring is completely mixed into the ice cream transfer each of colors to a decorating bag.
- Elevate the ice pop mold so it is sitting at an angle.
- Randomly fill each ice pop mold with all five of the colors, layering the colors until each ice pop mold is full.
- Place the ice pop mold lid on and insert wooden ice cream sticks.
- Place in the freezer and freeze for at least overnight.
To Dip and Decorate the Unicorn Ice Pops
- Prepare a large cookie sheet by placing a piece of parchment paper or wax paper on it. Set aside.
- Melt the white chocolate or candy melts in a container that is deep enough to immerse ½ the ice pop into.
- Pour the sprinkles into a bowl. Set aside.
- Unmold one ice pop at a time and dip it into the melted chocolate. Immediately sprinkle the sprinkles over the melted chocolate. Place the decorated ice pop down on the cookie sheet making sure you arrange the dipped ice pots so you have enough room for all 8 ice pops without them touching.
- Once you have dipped and decorated each ice pot place the cookie sheet into the freezer to allow the ice cream to harden once again before serving.
