Lisa Frank Birthday Party Cake Pops

If you are planning a Lisa Frank birthday party these Rainbow Cake Pops are perfect. Last year we threw my oldest granddaughter a Lisa Frank Birthday Party.

I made these Lisa Frank Birthday Party Cake Pops to match the Lisa Frank birthday party theme. Cake Pops make a perfect birthday party treat that can easily be made to match any birthday party theme.

If you were a kid in the 80's or 90's or had a daughter in elementary or middle school during the 80's or 90's you probably remember all the Lisa Frank rainbow hued products.

My oldest daughter was around 10 or so when all things Lisa Frank were popular and she had to have all those pretty rainbow and dancing unicorn decorated  colored pencils, folders, and trapper keepers.

Now I have three granddaughters who also love Lisa Frank products. You can still Lisa Frank products all over the place. They even occasionally show up in the dollar spot at Target. I've even bought them at the Dollar Tree.

Last summer Hailey my oldest granddaughter celebrated her 8th birthday with a Lisa Frank themed birthday party. I had a great time decorating Cake Pops to match the rainbow party theme.

Lisa Frank Birthday Party Rainbow Cake Pops

Each year it seems to get harder and harder to come up with new birthday party ideas for the kids. We've pretty much ran the gamut of Disney Princess birthday parties.

Back in June we celebrated my second oldest granddaughter's 6th birthday party with a Disney FROZEN themed birthday party and I will be sharing what I made for the FROZEN party soon.

This year Hailey's ( the oldest granddaughter) 8th birthday which will be an American Girls theme. I'm not sure what I will be making for that party yet. After that who knows what kids birthday party ideas we will come up with.

There is always my youngest grandson who will be turning 1 in September that we will have to plan for. A boy themed birthday party will be a fun change. I think we are doing a Minion Themed Birthday party. That should be fun!

How to make Lisa Frank Rainbow Cake Pops

Ingredients

  • 1 boxed cake mix any flavor or two Packets Pillsbury Purple Funfetti Cake Mix (I used the Purple Funfetti)
  • ingredients to make cake mix
  • 1 can white frosting
  • 2 bags Wilton Bright White Candy Melts
  • 1 bag each of Wilton Neon Green, Bright Pink, Neon Orange, Light blue, Purple and Neon Yellow Candy Melts.
  • 48 Wilton  lollipop sticks
  • 48 Wilton cellophane treat bags and ties
  • Crisco solid shortening

Directions

  1. Bake the cake as directed on the package and cool completely.
  2. Crumble cooled cake into fine crumbs.
  3. Mix ¼ of the can of frosting into the crumbs to start.
  4. Add more frosting a teaspoon at a time until all dry crumbs are moistened and a teaspoon of the dough  holds together when rolled into a ball.
  5. Using a small dough scoop form 36-48 cake balls.
  6. Place the cake balls on a cookie sheet in a single layer as you form them.
  7. Chill in the refrigerator until firm (about 15 minutes) or until you are ready to dip them.
  8. When ready to dip the cake pops remove half the cake balls from the refrigerator. If the cake balls have been frozen remove them from the freezer at least 30 minutes before you plan to dip them. Allow to thaw on the counter.
  9. Melt half a bag of Wilton Bright White candy melts at 10-20-second intervals in a narrow and deep container adding 1 tablespoon of a solid shortening to the container to help thin the candy coating for 20 seconds.
  10. After 20-seconds stir and return to the microwave for 10 seconds and stir again. Repeat until the candy coating is thin enough to slowly run off a spoon.
  11. Add more shortening in small amounts as needed.
  12. Dip a cake pop down into the melted candy melts to the stick allowing excess to drip back into the container.
  13. Place cake pop down on a cookie sheet covered with parchment paper centering it and standing it straight up.
  14. Repeat with remaining cake pops, melting more candy melts as needed.
  15. Allow candy coating to harden completely 30-60 minutes.
  16. Decorate the cake pops with a drizzle of different colors of melted candy melts. I used neon green, yellow, neon orange, pink, baby blue and purple Wilton Candy Melts.

Equipment

  • 48 small Lolli Pop Sticks
  • 48 Wilton cellophane treat bags and ties

Instructions
