  • 1 tablespoon olive oil
  • 2 lbs. skinless boneless chicken thighs
  • ½ cup chicken stock
  • 1 tablespoon minced garlic
  • 24 oz. jar marinara sauce
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 lb. cooked Rigatoni pasta
  • ½ cup shredded Parmesan cheese (plus more for garnish)
  • 1 tablespoon minced parsley (optional)

Instructions 

  • Start by setting your Instant Pot to the sauté function. Add olive oil and once hot, add the chicken pieces. Sauté until they're browned on all sides.
  • Remove the chicken and set aside. Turn the sauté function off. In the same pot, Add the Italian seasoning, salt, and ground pepper. Stir well.
  • Pour the jar of marinara sauce into the pot and stir to combine with the seasonings.
  • Put the chicken back into the pot and toss to coat with the sauce. Secure the lid and set the Instant Pot to high pressure for 15 minutes.
