And boy are they good! Every time I make them I have to fight the guys off while they are cooling. Otherwise, all this cheesy goodness would just run down the front of their shirts. You know how guys can be.

How to make Garlic Ranch Mac and Cheese Cups

Ingredients
  • 2 ½ cups cooked elbow macaroni
  • 1 ½ cups shredded mozzarella cheese divided
  • 1 ½ cups shredded sharp cheddar cheese, divided
  • 1 cup shredded fresh Parmesan cheese, divided
  • 4 ounces softened cream cheese
  • ½ cup Naturally Fresh® Classic Ranch Dressing
  • 1 teaspoon chopped garlic
  • 1 teaspoon parsley flakes
  • 1 teaspoon black pepper
  • ½ teaspoon salt
  • about 1 cup Panko Bread Crumbs
Directions
  1. Preheat oven to 350 degrees.
  2. Boil, drain, rinse the pasta and set aside.
  3. Spray a muffin pan with non-stick spray.
  4. Divide the Parmesan cheese between the 12 muffin wells.
  5. In a large bowl combine the cream cheese, ranch dressing, 1 cup of cheddar cheese, 1 cup of mozzarella cheese, garlic, parsley, salt and pepper.
  6. Mix the pasta into the cheese mixture.
  7. Using a spoon or an ice cream scoop fill each muffin well.
  8. Top each portion equally with the remaining shredded cheese.
  9. Sprinkle a teaspoon of bread crumbs over each serving.
  10. Bake for 25-30 minutes in the preheated oven until golden brown.
  11. Remove from the pan from the oven and allow the cheeses to set up for 15-20 minutes before removing from the muffin pan.
  12. Makes 12 servings.

    I love to bake and cook new things, but my teens don't always appreciate the different dishes I create. Being they are both mac and cheese fans I think they would like this, followed from the weekend Retreat party.
