Garlic Pasta with Asparagus

Garlic Pasta with Asparagus only takes fifteen minutes to make. It is the easiest dinner recipe I have made in a long time. Just because you are short on time you doesn't mean you can't make a delicious flavorful bowl of pasta for dinner.

This Garlic Pasta and Asparagus recipe has a light olive oil "sauce", sauteed asparagus with garlic and just a bit of red pepper flakes that gives it a nice little spicy bite. The fresh asparagus is crisp and delicious.

I used the a "smooth" Extra Virgin Olive Oil to sauté the asparagus. It has a mellow evo flavor that is perfect for sauteing delicate vegetables like asparagus.

A mellow olive oil is perfect to use when making my Tuscan Tomato and Mozzarella recipe and Marinated Mozzarella recipe. The light flavor will be perfect with the fresh herbs.

I don't know what I love more about this recipe- that it tastes so darn good or that it is so easy to make.

How to Make Easy Garlic Pasta with Asparagus

Ingredients

  • 8 oz angel hair pasta
  • 8 oz fresh asparagus, cut into bite size pieces
  • 3 tablespoons Olive Oil
  • 2 teaspoons minced garlic
  • ½ teaspoon red pepper flakes
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon minced fresh parsley
  • ¼ cup grated fresh Parmesan cheese

Directions

  1. Boil the pasta following the directions on the box, drain, rinse well with cold water and drain again.
  2. In a large skillet heat the olive oil and add the asparagus. Sauté 2 minutes.
  3. Add the garlic and saute 1 minute.
  4. Add the pasta and toss well.
  5. Add the red pepper flakes, salt and pepper. Toss well again.
  6. Saute 2 minutes.
  7. Serve immediately and top with freshly grated Parmesan cheese.

Ingredients
