Easy Grilled Summer Vegetables

 Grilled Summer Vegetables

Grilled Summer Vegetables are so easy to make. Now that you are a grill master and can grill a perfect steak or chicken breast it is time to add some grilled summer vegetables to the menu.

Grilled vegetables can be eaten alongside any meat as a side dish or you can use these grilled summer vegetables to make a meal like this Grilled Vegetable Sandwich.

Grilled Vegetables without a grill

When I am making grilled vegetables I like to grill a big batch to eat with a grilled chicken breast.

Then the next day I will use the leftover grilled vegetables to make a grilled summer vegetable quesadilla.

I don't know if you can tell from the photo but I used a George Foreman Grill (affiliate link) to make my grilled summer vegetables.

I've become a master at grilling on the George Foreman Grill.

My husband bought this brand new grill at a garage sale for $5!

It is missing the stand so I put it on a small child's table when I am grilling on it.

If you love eating grilled food but hate to mess around with a gas or charcoal grill I urge you to buy one now.

I love cooking on this electric grill.

I use it at least once a week to make grilled chicken breast for dinner.

And when you season your meat with a Smokehouse Maple (affiliate link) or Mesquite seasoning (affiliate link) like I do you can't even tell you cooked on an electric grill.

Look at the awesome grill marks on my vegetables! 

I have cooked everything on this grill from chicken breast to veggie burgers, sausage, shish kabobs, hot dogs, and corn on the cob. Anything I would cook on a traditional grill has been cooked on my George Forman Grill.

How To Make Grilled Summer Vegetables

Ingredients

  • 1 medium eggplant
  • 2 yellow squash
  • 1 medium zucchini
  • 1 sweet Vidalia onion
  • ½-3/4 cups Extra Virgin Olive Oil
  • 3 sprigs of fresh rosemary or 2 teaspoons of dry rosemary
  • 1 ½ Tablespoons finely chopped garlic
  • ½ teaspoon pepper
  • ½ teaspoon salt (optional)

Directions

  1. Slice the vegetables ¼ to ½ inch thick.
  2. Mix all the remaining ingredients to make a marinade.
  3. Spread the vegetables out in a single layer on a large cookie sheet.
  4. Brush the marinade over each side of the vegetables.
  5. Grill vegetables on a hot grill for about 5-8 minutes on the first side and 5 minutes on the second side.

    I wanted to love my George Foreman but man it just seemed like it dried everything out. There was no happy medium. I'm thinking of getting a grill / griddle pan for my stove that covers two burners and just go with that instead. It'll be the same pain to clean but at least I won't have to wait on my hubs to grill stuff outside.
