Crock Pot Spicy Cowboy Sausage Soup
This Crock Pot Spicy Cowboy Sausage Soup is spicy and delicious. Don't like spicy? Switch up the hot Italian sausage for mild Italian sausage. It will still be delicious just not as spicy.
Dear readers I am in a frenzy trying to write this crock pot recipe for you. It is going to be short and sweet as I am in the middle of getting ready to evacuate because of Hurricane Irma.
I am really ticked off at this hurricane. Not only has it turned the state of Florida upside down as we rush to prepare our homes or evacuate to keep our families safe. But today is my birthday!! : ( : (
And I was planning a big Pinterest celebration as I reached my 100,000 Pinterest follower which probably will have happened as I am on the road heading out of S.W Florida.
Here is the Crock Pot Spicy Cowboy Sausage recipe. Not my best photos but what can I say? I took them yesterday in between packing my precious belongings up for the trip.
How To Make Crock Pot Spicy Cowboy Sausage Soup
Ingredients
- 1 lb hot Italian pork sausage, casing removed
- 1 large onion, one to one ½ cups diced
- 2 tablespoons minced garlic
- ½ cup diced green bell pepper
- 10 oz can Rotel Original diced tomatoes and chilis
- 15 oz can pinto beans
- 15 oz can navy beans
- 32 oz chicken or beef broth
- 8 oz shredded cheddar cheese
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 2 teaspoons to 1 tablespoon chili powder
- Saute sausage in a skillet until browned, breaking it apart into bite size pieces.
- Add the onion and bell peppers to the pan and saute until onions are soft. Add the garlic and saute about 1 minute.
- Pour the contents of the pan into a 6 or 7 quart crock pot.
- Add the remaining ingredients to the crock pot and mix well.
- Cover and cook on high for 4 hours on high.

I made this soup today. So tasty, spicy, just plain good. Thanks for sharing this recipe. Need to keep the tissues handy because it sure does clear the sinuses! I will make it exactly the same next time. We loved it.

Thanks so much. Evacuating was a nightmare for many and that is part of the reason many people decided to ride the storm out. One of my biggest concerns was running out of gas and getting trapped on the highway. Hope you enjoy the recipe!
