I love cooking chicken thighs in my crock pot.
Chicken thighs are so moist and tender. Chicken thighs have so much more than chicken breasts do. I grew up eating dark chicken meat.
My mother struggled to feed a large family.
She had a very strict food budget. She meal planned like there was no tomorrow.
Things haven't changed much since I was a kid.
Chicken thighs are still cheaper than chicken breasts and as far as I'm concerned still taste better.
So what makes this crock pot chicken thigh recipe Greek?
The flavors of the ingredients do.
When you slow cook chicken with potatoes, onions, garlic, oregano and olive oil something magical happens.
The flavor combination is out of this world.

How to make Crock Pot Greek Chicken Thighs
- 1-2 lbs boneless chicken thighs
- 4-6 red potatoes cut into quarters
- 1 medium onion, cut into quarters
- 6 garlic cloves, peeled and slightly crushed
- 1 tablespoon dry oregano
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon olive oil.
- Place the potatoes into the bottom of a slow cooker.
- Place the chicken on the potatoes.
- Add the onion, garlic and seasonings to the slow cooker.
- Drizzle with olive oil.
- Cook on low for 5-6 hours or high 3-4 hours. Chicken is cooked through when an internal temperature of 165 degrees has been reached.
- Makes 4-5 servings.

I ate chicken hearts and livers as a child. I haven't had them in years. Funny thing is my youngest daughters boyfriend (20 year old) eats chicken livers and hearts all the time. It totally disgusts my daughter.
