Crock Pot Cheesy Ham Potato Soup

This Crock Pot Cheesy Ham Potato Soup recipe is one of the cheesiest soups I have ever made. It's also a perfect recipe to make when you have leftover ham.

Which is exactly how I happened to come up with this recipe. I made a Pineapple and Brown Sugar Baked Ham for an upcoming holiday post and decided to see how many recipes I could come up with using left over ham. I'll be sharing some of those olther left over holiday ham recipes soon.

This cheesy crock pot soup recipe only has a few basic ingredients like sliced potatoes and corn but when you put them all together they come together to make a lovely cheesy soup recipe that you are going to want to make again and again.

Almost every soup recipe I make includes chopped onions and green peppers. These two basic vegetables add so much flavor to soup recipes.

What can you make with a leftover Holiday Ham?

Left over holiday ham can be used to make a couple of casseroles or soup recipes. Well, that depends on how much ham you have leftover after the family enjoys the holiday meal of course.

I've been known to cut off choice pieces of a baked ham to use to flavor a pot of great northern beans. If you can't do that save every scrap of fat and all the ham pieces that are left on the platter that no one will eat or are too small to serve on a plate.

Those scrap pieces of ham that might have gone in the trash or be fed to the family dog can be used to flavor a couple other recipes.

Favorite Childhood Soup Recipes

Like one of my favorite childhood soup recipes-Split Pea Soup. I grew up on split pea soup. After every holiday that my mother served a ham for we knew we would be eating Split Pea Soup in the next couple of days. I also love making Crock Pot Great Northern Beans with left over ham.

If you don't have time to make a pot of soup with the leftover ham bone wrap the ham bone in plastic wrap or put it in a freezer bag and store it in the freezer until you have time to cook with it.

How to Make Crock Pot Cheesy Ham Potato Soup

Ingredients

  • 1 bell pepper, diced or ¾ cup diced bell pepper
  • 1 small onion, diced or ½ cup diced onion
  • 5 medium potatoes, washed, peeled and sliced thinly
  • 2 cups cubed ham
  • 15 ounce can corn kernels, drained
  • 1 cup milk
  • 2 tablespoons flour
  • 1 teaspoon ground pepper
  • ½ teaspoon salt
  • two 10 ounce cans cheddar cheese soup
  • 2 cups shredded cheddar cheese

Directions

  1. Chop or dice the pepper, onion and potatoes.
  2. Add the potatoes to the crock pot.
  3. Next add the peppers, onion, and corn to the crock pot.
  4. Add the cubed ham to the crock pot.
  5. In a bowl or measuring cup mix the milk, flour, salt and pepper until combined.
  6. Add the cheddar cheese soup and stir until combined.
  7. Pour the cheese soup mixture over the ingredients in the crock pot and add the shredded cheese.
  8. Stir all the ingredients to combine well.
  9. Cook on low for 6-8 hours or 4 hours on high or until the potatoes are tender.

    Leftover ham is one of the best things to have in the fridge. This soup isn't something I've made before but I definitely will now.
