The Caribbean Fruit Salsa Mix Ball® & McCormick® Recipe Cards comes with pre-measured and perfect amounts of spices you would expect to find in a Caribbean Salsa recipe.

The Ball® & McCormick® Caribbean Salsa Recipe Card includes the perfect amounts of crushed chipotle pepper, minced onion, minced garlic, thyme leaves, ground allspice, and ground nutmeg that gives this canned fruit salsa recipe a Caribbean flavor.

The Caribbean Fruit Salsa recipe is made with a combination of fresh pineapple, fresh or frozen mango and fresh or frozen papaya. This recipe is a rare one in that you can play around with the amounts of each of the fruit used.

For example you could change the flavor and texture of the Caribbean Fruit Salsa recipe by changing the amounts of pineapple fruit used to make one batch.

Then the next time you make it you could increase the amount of mango fruit used while decreasing the amount of pineapple fruit used to make a more mango flavored Caribbean salsa recipe with the next batch you make.

As long as you stick to the amounts of fruit called for on the recipe card which calls for a combination of 9 cups of pineapple, mango and papaya. Don't like papaya? Leave it out all together and use more mango instead.

How to Make and Can Caribbean Fruit Salsa

Ingredients
  • 6 cups fresh pineapple, diced
  • 1 cup fresh mango, diced (I used frozen mango)
  • 2 cups fresh papaya, diced (I used some frozen papaya I had How To Freeze Fresh Papaya)
  • ½ cup bottled lemon juice
  • Ball Canning & McCormick Spice recipe card Caribbean Fruit Salsa
Directions
  1. Prepare 4 pint jars and one ½ pint jar or enough jars in your favorite Ball canning jar size to can 4 ½ pints of salsa.
  2. Chop all of the fruit and place into a large enough pot to allow for plenty of extra room so it will not over boil.
  3. Add the lemon juice and spices to the pot and stir well.
  4. Place the pot on the stove and turn the heat on medium high.
  5. Cook the fruit until it comes to a simmer, about 10 or 15 minutes.
  6. Simmer the fruit for 10 minutes.
  7. Remove from the stove and fill the jars leave ½ inch head space.
  8. Wipe rims, place a flat lid on the jar and screw a band on. Set filled jar aside while filling the remaining jars with fruit salsa.
  9. Process in a hot water bath for 35 minutes.
Notes: I used the Ball FreshTech Auto Canning Jar appliance to heat and process my jars for this Caribbean Fruit Salsa recipe.
 
If you do not own this awesome canning appliance then follow all safe canning procedures to heat the canning jars and to hot water bath process this fruit salsa recipe.
 
Always use up to date safe canning procedures with a reliably tested canning recipe when preserving any foods for home consumption.
