It seems kind of funny that with all of the blistering cold weather the country has been having I am about to tell you it is Florida strawberry season.
Florida is the winter strawberry capital of the world. So even though you are probably trapped under a foot or more of snow as long as you can get to the grocery store you can enjoy the sweet flavor of red ripe Florida strawberries.
A short while ago I shared with you a Strawberry Balsamic Chicken recipe I made for a collaborative event with #SundaySupper and Florida Strawberries.
If you are a regular reader you probably know that I am located in Florida. I love to share recipes that feature fresh from Florida produce.
The winter months are a busy time for me because we have so many local in season vegetables and fruits that are at the height of the Florida produce season.
Matter of fact the winter is when our S.W. Florida Farmer's Markets are open. We have a few that are open year round but during the winter months I can find a Farmer's Market nearby on just about any day of the week.
I served this Spinach, Strawberry and Avocado salad with homemade Balsamic Vinaigrette Dressing along side the Strawberry Balsamic Chicken recipe.
It was a perfect pairing of sweet and savory flavors. Even if you never try the Strawberry Balsamic Chicken recipe this Balsamic Vinaigrette Dressing is a must have recipe to keep handy.
It has a perfect ratio of oil and vinegar that emulsifies perfectly after shaking it for just a few minutes and it stays emulsified.
The olive oil and balsamic vinegar do not separate immediately like a lot of olive oil and vinegar dressings are apt to do.
Spinach, Strawberry and Avocado Salad is beautiful!

A drizzle of the Balsamic Vinaigrette Dressing adds the perfect contrasting color. Plus it tastes amazing!

How To Make Homemade Balsamic Vinaigrette Dressing
Ingredients
- ¾ cup best extra virgin olive oil
- ¼ cup best balsamic vinegar
- 1 tablespoon dark brown sugar
- 1 tablespoon spicy Dijon mustard (I used my homemade Dijon Mustard)
- 1 garlic clove, minced
- ½ teaspoon salt
- ¼ teaspoon freshly cracked black pepper
- Put the extra virgin olive oil, balsamic vinegar, brown sugar, Dijon mustard, minced garlic, salt and pepper into a jar with a tight fitting lid.
- Shake the Balsamic Vinaigrette Dressing ingredients well until emulsified.
- Makes about 1-¼ cup of Balsamic Vinaigrette Dressing.
- Serve with a fresh spinach, strawberry and avocado salad.
- Refrigerate left over Balsamic Vinaigrette Dressing. Will last at least a week refrigerated.

Balsamic Vinaigrette Dressing
