I have been making this creamy fettucine alfredo sauce with milk for years now. I use it to make all of my alfredo recipes.
How to make the spicy alfredo sauce
I love this homemade spicy alfredo sauce recipe. I love fettuccine alfredo and spicy Cajun chicken alfredo is just as easy to make.
I know you will never buy a jar of sauce again once you make this recipe.
I use my homemade alfredo sauce with milk as the base sauce and add all the spicy goodness with Cajun seasoning, chili powder and red pepper flakes.

Ingredients
You will need a couple of pieces of boneless skinless chicken, cajun seasoning and butter, milk, Parmesan cheese, salt, pepper, chili powder, and red pepper flakes. Simple basic ingredients you probably have on hand.
You can adjust the spiciness factor by adjusting the amount of red pepper seasoning you add to the sauce.
- Chicken: We like white boneless skinless chicken. You can also use boneless skinless chicken thighs.
- spicy flavorings: Cajun seasoning, chili powder and red pepper flakes
- olive oil: to sauté the chicken and prevent it from sticking to the skillet.
- fettuccine pasta: You can use other shape of pasta if need be.
- alfredo sauce: butter, all-purpose flour, ground black pepper, salt, whole milk, real Parmesan cheese.
Directions
Step 1: Cook the fettuccine pasta following the directions on the package. Drain well and set aside.
Step 2: Season the chicken on both sides with the Cajun seasoning. I like Badia Louisiana Cajun Seasoning. Set aside for 15 minutes to season the chicken.
Step 3: Heat the olive oil in the skillet over medium heat. Place the chicken into the skillet and cook until the chicken is golden browned and cooked through the center and has reached at least 165 F. degrees on a instant read meat thermometer.
Place the cooked chicken on a plate and allow to rest for a few minutes before slicing into thin slices or cutting into bite sized cubes.
Make the spicy alfredo sauce.

Step 1: Melt the butter in a large deep skillet or a sauce pan. Add the flour, salt and ground black pepper, Make a roux by whisking the flour and seasonings into the melted butter to create a thick paste.
Step 2: Continually whisk the mixture for about 3 minutes as the flour and butter mixture cooks. Slowly pour the milk into the flour mixture while whisking. Whisk well to blend the thickened roux into the milk until all lumps are gone.
Step 3: On medium heat slowly bring the alfredo sauce to a boil while whisking. Once a low boil has been reached add the shredded real Parmesan cheese to the pan and whisk well until the cheese has melted.
Continue to boil the alfredo sauce over medium high heat until thickened. Once thick remove the pan from the heat.
Step 4: Stir the ground chili powder and red pepper flakes into the alfredo sauce.
Taste the sauce and adjust the spiciness by adding more red pepper flakes if you would like the sauce to be extra spicy.
Combining the ingredients
Pour the spicy alfredo sauce over the pasta in a serving bowl or the skillet you cooked the chicken in.
Add half of the Cajun chicken, about a ¼ cup of shredded Parmesan cheese, a sprinkle of red pepper flakes and a large pinch of dried parsley flakes to the skillet.
Toss the pasta and chicken to coat with the alfredo sauce.

- 2 lbs. boneless skinless chicken
- 2 tablespoons Cajun Seasoning
- 2 tablespoon olive oil
- 8 ounce fettuccine pasta (cooked following directions on the package)
Spicy Alfredo Sauce with milk
- 4 tablespoons butter
- 3 tablespoons all-purpose flour
- ½ teaspoon ground black pepper
- 1 teaspoon salt
- 3 cups milk
- ¾ cup grated Parmesan cheese (plus more for garnish)
- ½ teaspoon ground chili pepper
- ½ teaspoon red pepper flakes (optional: more for garnish)
- 1 teaspoon dried parsley flakes (optional: for garnish)
Instructions
To make Spicy Cajun Chicken
- Cook the fettucine pasta following the directions on the box. Drain well and set aside until needed.
- Trim the chicken if needed. Sprinkle the chicken with the Cajun seasoning on both sides. Set aside for 15 to 30 minutes.
- Heat the olive oil in a skillet. Add the chicken to the skillet and cook until golden and cooked through the center. About 8 minutes.
- Place the cooked chicken on a plate and allow to rest for a few minutes before slicing into thin slices or cutting into bite sized cubes.

- Pour the spicy alfredo sauce over the noodles and stir to combine. Add half the chicken and about ¼ cup of Parmesan cheese and toss with the pasta and the sauce to coat. Arrange the remaining chicken pieces over the top and serve.
- Garnish each serving with shredded cheese, parsley and red pepper flakes.
- Serve with slices of crusty bread and a salad on the side.
