Crock Pot Dried Bean Soups
I love making crock pot soup recipes with dried beans. Crock Pot dried bean soups are one of my favorite meals. I eat them all year long.
You can simmer dried beans and your favorite soup ingredients all day long and the dried beans will be cooked perfectly.
You don't have to fuss with soaking and rinsing or prepping the dried beans by doing a quick boil on the stove.
Crock Pot Italian Bean Meatball Soup Recipe
I made homemade mini pork and beef meatballs for this Crock Pot Italian Bean Meatball Soup recipe. I love making homemade meatballs because they taste so much better than frozen meatballs.
But, if you need to you can substitute frozen meatballs for the homemade pork and beef meatballs I used in this recipe.
Crock Pot Italian Bean Meatball Soup Ingredients
As you can see the ingredient list for this crock pot Italian soup recipe is pretty short. That's because Hurst's has done such a great job of creating a perfect Italian seasoning packet in the new Italian Bean Soup.
- NEW Hurst's HamBeens® Italian Bean Soup (found with the dried beans)
- 14.5 oz can diced tomatoes
- 1 medium onion, diced
- ½ cup diced celery
- 2 dried bay leaves
- ½ teaspoon dried thyme
- ½ teaspoon dried basil
- 8 cups beef broth
- 24 Homemade or Frozen Mini Meatballs
Put all of the soup ingredients, except the meatballs into a 7 quart crock pot and stir to combine. Place the lid on the crock pot and cook for 8-9 hours on low or 6-7 hours on high.
An hour before the soup is done add the meatballs to the crock pot and stir. If using frozen meatballs thaw in the microwave before adding to the crock pot. Continue to cook until the beans are tender and the meatballs are cooked through.
Makes about 8 servings.

Recipe Expert Tips
- Frozen Meatballs: If using frozen meatballs thaw them in the microwave before adding them to the hot soup in the crock pot. If you add frozen meatballs to the hot soup it will cool down the hot soup so much that it could take an hour or more for the soup to come back up to the boiling temperature and could add up to an extra hour of cooking time.
- Homemade Meatballs: Homemade meatballs should be cooked in a skillet before adding to the soup.
