Pepperoni Bruschetta Bites

Toss together a quick appetizer or snack with fresh ingredients for these Pepperoni Bruschetta Bites. Use a crispy garlic flavored cracker or traditional toasted sliced bread.

Ingredients  

  • 12 pieces Garlic flavored crackers
  • 12 slices pepperoni
  • 3-4 ounces fresh mozzarella cheese (diced finely)
  • ¼ cup extra virgin olive oil (add more as needed)
  • ¼ cup finely diced tomatoes
  • 1 clove garlic (finely minced)
  • 1 teaspoon finely minced fresh rosemary
  • ½ teaspoon finely minced fresh oregano
  • ½ teaspoon finely minced fresh basil
  • ½ teaspoon red pepper flakes
  • ¼ teaspoon sea salt
  • ¼ teaspoon pepper

Instructions 

  • In a bowl mix the fresh diced mozzarella cheese, chopped tomatoes, diced herbs, red pepper flakes, salt, pepper and olive oil.
  • Refrigerate for at least an hour or overnight before serving.
  • Place a pepperoni slice on top of a garlic butter flavored cracker.
  • Mound each cracker with ½ teaspoon of Bruschetta topping.
