Place the mayonnaise, parsley, olive oil, red wine vinegar, cilantro, garlic clove, red pepper flakes, cumin and salt in a blender. Puree until smooth and creamy.
Refrigerate until needed.
Making the burgers
In a medium size bowl mix the mayonnaise, bread crumbs, and soup mix until combined.
Add the ground turkey or beef to the bowl and fold the mayonnaise mixture into ground meat. Shape into 8 patties.
Grill, broil or cook the burgers in an air fryer until cooked through the center. Top with cheese if desired.
Place a burger on a bun and add any of your favorite burger toppings. Drizzle with chimichurri sauce before serving.
