Crock Pot Chicken Tomato & Bean Soup

This Crock Pot Chicken Tomato and Bean  Soup is a hearty, satisfying meal made with canned beans, tomatoes, and  tender boneless chicken. Easy to prep and full of rich flavor, it's  perfect for an easy meal for busy nights.

INGREDIENTS

Boneless Chicken Carrots | Onion Cannelloni Beans Black Beans Diced Tomatoes Pepper | Salt Garlic | Bay Leaves Chicken Stock | Water

– Prepare  the Funfetti Cake & Cupcake mix as directed on the package adding  the ½ teaspoon to the bowl with the rest of the ingredients. – Fill cupcake papers ¾ full.

Place the chicken, beans, diced tomatoes, carrots, garlic, salt, pepper, bay leaves, and chicken stock into a 7-quart or larger slow cooker, spreading everything out evenly.

Cover and cook on high for 2 to 3 hours, or until the chicken is fully cooked through and reaches an internal temperature of 165°F.

COOK

Carefully remove the cooked chicken from the slow cooker and let it rest for 5 to 10 minutes, then shred or cut into bite-size pieces.

SHRED

Return the shredded  chicken to the slow cooker and stir well to combine. If desired, add a cornstarch slurry and cook one more hour to thicken.
