Freezer Breakfast Sandwiches Recipe made with English Muffins, Eggs, Bacon and cheese. Make these breakfast sandwiches and wrap them up and freeze them for busy mornings when you are short on time.
Fry the bacon until crisp and drain. Preheat the oven, whisk together the eggs, milk, seasonings, and shredded cheese, then pour the mixture into a greased 9x13-inch baking pan.
Bake the eggs for 22–24 minutes until fully set in the center. While they bake, toast the English muffins, buttering them lightly if desired, then let the baked eggs cool before removing them.
Loosen the baked eggs by running a knife around the edges. Flip them onto a cookie sheet using parchment paper, then cut egg rounds with a biscuit cutter to fit the English muffin bottoms.
Assemble each sandwich with an egg round, crispy bacon, a slice of cheese, and the muffin top. Wrap each sandwich tightly in two layers of plastic wrap, place in a freezer bag, and freeze until needed.
